Foutou is a truly traditional African dish that is created by smashing cassava and plantains separately until they are a paste, then mashing them together to create a ball with a thick, sticky consistency. It’s accompanied with a sauce, traditionally sauce graine. This accompaniment is smashed palm fruit simmered for a few hours with meat, onions, and other spices.

I will admit that this is the first African dish that I probably won’t be ordering again. This one goes beyond my palate.
