Damson Plum and Honey Compote
Unlike our apple tree, which is chocka with fruit every year, even when we think -with a bit of relief!- the harvest won’t be as good this year; our pear and plum tree take a year off between bountiful harvests. This Summer, the plum tree already has heaps of ripe fruit, and amongst the perks of working from home, picking plums in your back yard in the morning to make this lovely Damson Plum and Honey Compote, is a sheer luxury! Happy Monday!
Ingredients (serves 2):
- 6 beautiful, just ripe Damson plums
- 1 tablespoon unsalted butter
- ½ tablespoon fragrant pure honey (like Manuka, heather or eucalyptus)
Rinse Damson plums. Halve and pit the plums. Set aside.
In a small saucepan, melt butter over a low flame. Once butter is foaming, add Damson Plum halves, and cook, stirring occasionally until softened, about 3 to 4 minutes. Then, stir in Manuka Honey, and cook, a minute more.
Serve Damson Plum and Honey Compote warm, on its own or over Greek Youghurt….
