Teriyaki Blinis with Caviars

With the Asian touch of teriyaki sauce, the fluffiness provided by Albuwhip and yuzu pearls made with Agar-agar, this recipe promises to win the heart and palate of any haute cuisine lover.

Ingredients
  

Teriyaky Blinis with Caviars

  • 300 g Teriyaki blinis
  • 30 g Yuzu pearls
  • 60 g Isigny sour cream
  • 30 g Salmon roe
  • 0,6 g Fennel

Teriyaki blinis

  • 70 g Water
  • 27 g Albuwhip Sosa
  • 180 g Soft flour
  • 60 g Mascarpone
  • 6 g Baking Powder Std
  • 100 g Teriyaki sauce Culinary Journey
  • 20 g Sunflower oil
  • 10 g Corn starch
  • 3 g Salt

Yuzu pearls

  • 100 g Yuzu purée
  • 10 g Agar-agar powder Sosa
  • 1000 g Sunflower oil
  • 10 g Yuzu natural concentrated paste Sosa
  • 400 g Water

Instructions
 

Teriyaki blinis

  • Mix the water with teriyaki sauce, mascarpone and sunflower oil and blend for one minute.
    70 g Water, 60 g Mascarpone, 100 g Teriyaki sauce, 20 g Sunflower oil
  • Besides, mix the remain ingingredients and pour in the last elaboration. 
    27 g Albuwhip, 180 g Soft flour, 6 g Baking Powder Std, 10 g Corn starch, 3 g Salt
  • Blend one more minute. 
  • Fill a siphon gun with thedough and add the gas until it gets full. 
  • Keep in the fridge for the service.

Yuzu pearls

  • Mix all the ingredients except the oil and bring it to a boil.
    100 g Yuzu purée, 10 g Agar-agar powder, 10 g Yuzu natural concentrated paste, 400 g Water
  • Using a squeeze bottle pour drops into very cold sunflower oil. 
    1000 g Sunflower oil
  • Let set and rinse under cold water.

Main Elaboration Teriyaky Blinis with Caviars

  • Place a scoop of cream on the blini and cover it with the caviars previously mixed. 
    300 g Teriyaki blinis, 30 g Yuzu pearls, 30 g Salmon roe, 60 g Isigny sour cream
  • Finish the elaboration with a fennel cress.
    0,6 g Fennel
