Edward Kidder’s Early 18th Century Mince Pies


This post complements the 2023 Christmas special of The British Food History Podcast called ‘Mince Pies’:


As promised on this year’s Christmas episode of the podcast, all about mince pies, here is my pastry recipe and method for making the shaped-mince pies in E. Kidder’s Receipts of Pastry and Cookery. It was originally published in 1721, but I used the 1740 edition of the book (here’s a link to the document). If you go to the end of the book, you will see lots of different minced pie templates, just like the ones below. The idea was that you rolled out your pastry and cut a shape out, then made pastry walls, filled them with mincemeat, placed on lid on top and baked it. Really beautiful, but fiddly-looking shapes, I’m sure you’ll agree.

I felt a little nervous making them, so let me at this point, say a massive thank you to Ivan Day for the advice he gave me on shaping these pies. Ivan has an excellent blog with a fascinating article about mince pies (click this link to read it).

In the Christmas episode, I considered making some of the pie designs in Robert May’s The Accomplisht Cook (first published in 1660), but I found Edward’s designs much easier to extrapolate into three-dimensional pies! However, here are a few from May’s book to give you an idea of the sorts of minced pies he was making:

The Materials

The first thing you need to do is get organised with your templates. I simply took screenshots of the book, printed them out and cut them out. You can make them any size you like. My shapes were around 10cm wide, and I went for the ones that looked the easiest!

Then you need the correct tools for the job. I have collected over the years various pastry tools, both antique and modern. The wheels are called jiggers, which are used for cutting pastry. The antique ones usually come with a crimping tool attached, and these are used to fuse two pieces of pastry. The one I own with what looks like a flat pair of tweezers was particularly helpful for the pies I made here. I used a paring knife to cut out the shapes – the jiggers weren’t appropriate for these smaller pies.

Jiggers do come in handy for cutting out the pastry walls – essentially strips of pastry – I have a tool that’s made up of 5 jiggers on one expandable frame so you can cut several strips of the same thickness in one go.

That’s the tools of the trade, but now let’s look at our ingredients: we need mincemeat (I used the lamb mincemeat, recipe here) but you can use any you like.[1] Then we need some pastry that is mouldable (we don’t want the walls collapsing in the oven!) yet edible.

Mouldable Hot Water Pastry

I came up with the following recipe, based on one given by Jane Grigson in English Food.[2] It’s very good for moulding, but not particularly delicious, I made a few changes and I think it’s pretty good. It is simple to make, and this was enough for 8 to 10 pies, depending upon how large your templates are (you could, of course, make one large one!)

500 g plain flour

125 g salted butter, diced

125 g lard, diced

75 ml hot water

2 tbs icing sugar

First, rub the butter into the flour until it resembles breadcrumbs. Put the lard in a saucepan and pour the hot water over it. Heat gently, but be careful – you don’t want it to boil and splutter. Stir in the icing sugar and when it is dissolved, make a well in the centre of the flour-butter mixture and pour into it three-quarters of the hot liquid. Cut the liquid in with a knife, then pour the remaining hot liquid to pour over any dry patches that remain. Once all of the water has been added, give the pastry a knead (leave it to cool a little if you need to). It should be smooth, pliable and waxy. Cover with cling film and allow to cool completely, but do not refrigerate.

Constructing the Pies

Now you can roll out a third of the pastry thinly – aim for the thickness of a pound coin, 2 to 3 millimetres – and cut out your bases. Now roll out another third into a long strip, long enough to go around the perimeter of your shapes. To do this, use a piece of string to trace around the shape. When the appropriate length, use a ruler to cut your strips at your desired thickness. I went for 2 cm, but I could have gone thicker than that, I think.

Now the fiddly bit: brush the edges of the bases with plain water and glue the sides on. Use your finger and thumb to pinch them together, and then crimp them with a crimper tool if you have one. Repeat with all of your shapes and place in the fridge for a few hours to firm up. When firm, roll out the final third of the pastry and cut out your lids.

Fill your pies with your chosen mincemeat, brush the rims of your pies with water and fix on the lids in the same way as you did the bases. Make a steam hole and place back in the fridge for 30 minutes to firm up again. Meanwhile, preheat your oven to 200°C.

If you like, brush your pies with an egg wash before you bake them for 25 minutes, or until a good golden-brown colour. If you are making large pies, turn the heat down to 175°C and cook longer: you should see or hear the filling bubbling, telling you it is ready!

[1] Though it is best to use a low-sugar recipe, not a gloopy one from the supermarket shelves. I recommend Jane Grigson’s orange mincemeat or Mrs Beeton’s traditional mincemeat.

To Make a Seed Cake

Miss Lavinia and Miss Clarissa partook, in their way, of my joy. It was the pleasantest tea-table in the world. Miss Clarissa presided. I cut and handed the sweet seed-cake – the little sisters had a bird-like fondness for picking up seeds and pecking at sugar; Miss Lavinia looked on with benignant patronage, as if our happy love were all her work; and we were perfectly contented with ourselves and one another.

I do love a seed cake, once a key element of a British teatime table. Sadly, it’s largely either forgotten, or worse, ignored in our modern world of ‘instagrammable’ drizzle cakes, or multi-coloured creations slathered with luxurious buttercreams and frostings. With that sort of competition, the poor old seed cake doesn’t get a look in, bless it. As a result, the only way you are going to taste is to make one.

For those in the dark as to what I’m banging on about, a seed cake is a plain, rather dry cake flavoured subtly with caraway. It’s texture is similar to that of a madeira cake; dry enough so that it is perfect to have with a nice cup of tea for your elevenses. It has just the right amount of clack, as we northerners say; a tendency to stick to the roof of your mouth. Don’t let this put you off – it’s plainness is what makes it perfect. Super-sweet cakes covered with their myriad fillings are fine, but often a little too much to take.

Hannah Glasse had several seed cake recipes

Seed cakes appear in cookbooks from the seventeenth century, but only really became a cornerstone of the tea table in the eighteenth. They were a different beast then; sugary cakes also said something of both your status and sensibilities, so other things were added. Hannah Glasse added allspice, cinnamon and ambergris in one of her recipes.1 It was a time before chemical raising agents too, so cakes at this time were made light by the action of live yeast. Seed cake, therefore, was reserved for those who had a taste for the finer things in life, such as Parson Woodforde, diarist and great lover of cakes, puddings, pies and confectionary. He loved listing what he’d had for dinner. Take this entry from 17 August 1778:

7 p.m. Hot hash, or cold mutton pies. Saturday night an addition of good seed-cake of one pound, covered with sugar and a quart of good beer poured over it.2

Fast-forward a century and we see that the seed cake is pretty much what we would expect to see; the only difference being that a splash of brandy, rather than milk, is used to slacken the mixture.3

A seed cake cannot be made with any other seed than caraway. Sure, you could swap them for poppy seeds or some such, but you will have made a cake with seeds in it, not a seed cake! What’s so special about caraway then? Well, caraway was used to flavour all sorts of foods ever since ancient times, because unlike the other spices* it grew happily throughout Europe. It is an essential flavouring in German sauerkraut for example. In Britain, folk seemed to prefer to use in sweet foods, as Elizabeth David noted: “Apart from seed cake, (why were those cakes always so dry?) once the great English favourite, and caraway sweets and comfits, caraway appears little in English cooking.”4

Elizabeth’s quote eludes as to why this cake fell out of favour – it’s viewed as boring, dry, stale perhaps, but I disagree. It is light, and because it contains very little liquid compared to, say, a moist Victoria sponge, it is paramount that the butter and sugar are well creamed together, the flour is carefully folded in without over-mixing, and that it is not over-baked. This is where I fear folk may go wrong: baking an extra ten minutes, just to be on the safe side, will produce a dry, boring cake. Done well, however, a seed cake can be as superlative as any Proustian madeleine.

175 g salted butter, softened

175 g caster sugar

3 eggs

250 g self-raising flour

1 tbs ground almonds

1 tbs caraway seeds

 Around 3 tbs milk (or brandy)

Preheat your oven to 180°C and line a 2 pound loaf tin (usually around 23 cm long) with greaseproof paper, keeping it in place with a smear of butter or cooking oil.

In a mixing bowl cream the softened butter until pale and fluffy. Add an egg and one tablespoon of the flour and beat in until smooth. Repeat with all of the eggs. Mix the remaining flour with the ground almonds and caraway seeds and tip into the mixture.

Fold in carefully and when combined, add the milk (or brandy) to loosen the batter slightly – unlike a regular sponge, you are not looking for a dropping consistency with seed cake, so don’t go overboard: start with two tablespoons and see how it looks.

Spoon into the tin and smooth the top – you don’t have to be fastidious here, as the batter cooks it levels out all on its own.

Bake for around an hour – this will depend on the dimensions of your tin, in my wide one, it took just 55 minutes. Test with a skewer if it is ready – I’ll say it again: it’s important not to overbake seeing as the batter is on the dry side.

Let it cool in its tin for 15 minutes before removing and cooling on a rack. These sorts of cakes are best eaten on the day, or the day after, they are baked.

*Mustard also grows in Europe, hence its heavy use in British recipes throughout history.

Smoking Bishop

Fine oranges well roasted with sugar and wine in a cup, they’ll make a sweet Bishop when gentlefolk sup.

I spent part of the week in London this week and made sure I had a wander around the Tower Bridge area, my favourite part of the great city. The tiny roads are still so very evocative of Dickens with many of the street names and yards appearing in his writings. Much of Little Dorrit takes place in this area of London, but it was such a bitingly-cold day that it put me more in mind of the winter scenes described in Dickens’ novella A Christmas Carol.

At the very end of the story, when it dawns upon the old miser Ebenezer Scrooge that it’s nice to be nice, he offers his long-suffering clerk a well-deserved pay rise and some delicious steaming-hot smoking bishop:

“A merry Christmas, Bob!” said Scrooge, with an earnestness that could not be mistaken, as he clapped him on the back. “A merrier Christmas Bob, my good fellow, than I have given you, for many a year! I’ll raise your salary, and endeavour to assist your struggling family, and we will discuss your affairs this very afternoon, over a Christmas bowl of smoking bishop, Bob! Make up the fires, and buy another coal-scuttle before you dot another i, Bob Cratchit!”

Christmas wouldn’t be Christmas without a heady hot boozy snifter and smoking bishop is the best of all, in my opinion. Everyone is sick of mulled wine these days – or at least I am – this is the way to go; a marvellous mixture of port, oranges and spices.

The drink is smoking because the oranges – preferably bitter Seville oranges – are roasted until blackened. The drink is a bishop because it is one of several drinks once known as ‘ecclesiasticals’; drinks named after various orders within the Catholic church. Indeed, if you substitute the port for claret, you have a smoking cardinal; better still, use champagne and you’ve got yourself a smoking pope! I have never tried these, but I think I might give smoking pope a go but using Prosecco instead. There was a spate of these somewhat anti-Catholic snifters during the 17th and 18th centuries, but it was just a wry dig, compared to what had happened in the past (e.g. this post). If you look up the recipe for a smoking bishop in Eliza Action’s classic 1845 book Modern Cookery for Private Families, inset is an illustration of a mitre-shaped punch bowl into which it should be served!

Many port drinks were created around this time too because France and England were tied into an out-of-control tit-for-tat game with tariffs for exports between the two countries, making French wine – the preferred drink at the time – too expensive for most people, and so eyes moved to Spain and it was soon Cheerio! Chateau Neuf de Pape and Hello! lovely port wine.

One of the reasons I don’t always like mulled wine is that it can be a little heavy on the spices. A smoking bishop uses fewer spices, in fact my recipe uses only one: cloves. The only other aromatics being the oils released from the burnt bitter orange rinds. Aside from that, just a little water and some dark brown sugar are added to taste.

It’s a delicious and easy drink to make, and you will never go back to mulled red wine again once you’ve tried it, so please give it a go; you won’t be disappointed!

Smoking bishop can be made ahead of time, strained, and reheated with great success.

One 750 ml bottle of port

3 oranges (Seville, if possible)

8 cloves

250ml water

Dark brown sugar to taste

Place the oranges on a tray and bake at 200°C for around 25 minutes until they have started to blacken and give off their delicious burnt aroma. Remove from the oven and allow to cool a little before slicing them up.

Next, pour the full bottle of port into a saucepan (very satisfying to do) along with the oranges and any orange juicy bits, as well as the cloves and water.

Bring to a bare simmer – don’t let it boil! – and let it gently tick away at a scalding temperature (around 80°C) for around 20 minutes.

Add sugar to taste – if the oranges are very bitter and black, you might need quite a bit. If you don’t want bits of orange pulp and clove floating about in the drink, strain into a clean pan before adding the sugar.

If, in the unlikely event, you do not have a mitre-shaped punch bowl, you can simply ladle straight from the saucepan into punch glasses or small mugs.

Third Course: ‘Mutton to eat as venison’ with Lenten Pie

Here we are at the mid-way point of the Dinner Party Through Time and we have arrived in the Georgian period with two great recipes inspired and stolen from the excellent 18th century cook book The Experienced English Housewife by Elizabeth Raffald. The book and the great lady herself deserve a post to themselves really; it lets such a light into the world of grander houses during that time. It’s a book I often leaf-through, so it was the obvious choice.

I thought that the course should be from opposite ends of the gastronomic spectrum with a rich leg of mutton, specially prepared to taste just like venison, and a Lenten pie, specially made for fast days and full of lovely vegetables and herbs.

To dress a Leg of Mutton to eat like Venison

Get the largest and fattest leg of mutton you can get cut out like a haunch of venison as soon as it is killed, whilst; it will eat the tenderer. Take out the bloody vein, stick it in several places in the under side with a sharp pointed knife, pour over it a bottle of red wine, turn it in the wine four or five times a day for five days. Then dry it exceeding well with a clean cloth, hang it up in the air with the thick end uppermost for five days; dry it night and morning to keep it from being damp or growing musty. When you roast it cover it with paper and paste as you do venison. Serve it up with venison sauce. It will take four hours roasting.

It was very intriguing, but it was also obviously unachievable. Looking in other books, I found many versions of it, sometimes roasted, sometimes braised, but always marinated in red wine (and often in the blood of the beast too!). I knew the recipe looked familiar, and it finally dawned on me that an updated recipe for it appeared in good old English Food by good old Jane Grigson. It’s not served with a rich venison sauce, but a gravy made with the cooking liquor

There’s a 4 day marinating time for this recipe, so plan ahead if you fancy making it. It is worth it, this is one of the most delicious things I have ever cooked and eaten. It is beautifully gamey, but with the moist succulence you would expect from lamb or mutton. It is magically transformed! Witchcraft can only be to blame.

Here’s what you need:

1 full leg of mutton (or lamb)

For the marinade:

250g onions, chopped

250g carrots, chopped

100g celery, chopped

4 or 5 cloves of garlic, chopped

3 tbs sunflower oil or lard

2 bay leaves

3 good sprigs of thyme

6 sprigs of parsley

3 sprigs of rosemary

12 crushed juniper berries

12 crushed coriander seeds

15 crushed black peppercorns

1 tbs salt

750ml red wine

175ml red wine vinegar

To cook the mutton:

3 onions, sliced

3 carrots, diced

3 celery stalks, sliced

3 leeks, sliced

375g unsmoked streaky bacon, chopped

90g salted butter

Veal stock or water

To make the marinade, fry the vegetables in the oil or fat. Take your time over this and get them good and brown; the veg won’t be in the final dish, but their flavour will be. Let them cool, and mix with the remaining marinade ingredients.

Score the fat of the leg into a diamond pattern, like you would do for a ham. Find a large, deep dish or pot and place the lamb inside and pour over the marinade. Make sure the whole leg gets the marinade on it, so turn it over a few times. Keep the leg somewhere cool – a fridge, or a nice cool cellar or pantry – and cover it with foil. Turn it twice a day for four days.

When the four days is up, get the new set of vegetables ready. To cook the mutton, spread the prepared vegetables over the base of a deep roasting tin, place the leg on top and strain the marinade over it. Top up the marinade liquid with veal stock or water so that it comes up two-thirds of the way up the tin. Cover with foil.

You have two choices now: either bring the whole thing slowly to boil and simmer gently for 3 hours on the hob, or bring to simmer and pop it in a cool oven instead, 150⁰C will do it, for a similar amount of time. Turn the joint over after ninety minutes and in the final half an hour, ladle out 2 pints of the cooking liquid and boil it down hard to make a concentrated, richly flavoured stock.

When the cooking time is up, remove the leg and put it into another roasting tin and turn the oven up to 220⁰C. Roast for a good 20 minutes and baste well with the concentrated stock to achieve a nice glaze. Any remaining concentrated stock can be used as gravy.

An Herb Pie for Lent

Take lettuce, leeks, spinach, beets and parsley, of each a handful. Give them a boil, then chop them small, and have ready boiled in a cloth one quart of groats with two or three onions in them. Put them in a frying pan with the herbs and a good deal of salt, a pound of butter and a few apples cut thin. Stew them a few minutes over the fire, fill your or raised crust with it, one hour will bake it. Then serve it up.

Groats are whole grains of cereals and oats or barley could have been used, but I chose whole wheat. The only change I made was to use a normal shortcrust pastry and make a regular double-crust pie in a tin, rather than a raised crust with a hot water pastry. I regret that a bit now, but I wasn’t as good at pastry then as I am today. It is a good pie – some plainer cooking that married very well with the rich meat.

Here’s how I approached the recipe:

1 onion, chopped

oil or butter

150g wholewheat groats

generous knob of butter

2 Cox’s apples, peeled, cored and sliced

2 little gem lettuce, sliced

1 leek, sliced

1 medium golden beetroot, diced

1 handful of spinach, rinsed

1 bunch parsley, chopped

shortcrust pastry

Begin by gently frying the onion in a little butter or oil until soft and golden. Add the groats and cover with water. Simmer gently until the groats are tender, topping up with more water if things look a little dry. Season with salt and pepper and allow to cool. Meanwhile fry and soften the apples in butter and let those cool too.

Mix the apples with the groats and the remaining vegetables and line a pie tin with shortcrust pastry. Tip in the mixture and cover with more pastry in the usual way.

Glaze with beaten egg and bake at 200⁰C for 20 minutes until golden, then turn down to 175⁰C for 35 to 40 minutes.

Pompion (Pumpkin) Bread

I was recently bequeathed a lovely home-grown organic pumpkin from my good friends Simon and Rachel Wallace – they are slowly but surely building up a small-holding on a farm in the Derbyshire country. They are living the dream, and I am more than a little jealous. Anyway, I wanted to do the lovely pumpkin justice and make some nice meals. I remembered a recipe for pumpkin bread that appears in English Bread and Yeast Cookery by Elizabeth David. She takes it straight from the original manuscript, an 18th century periodical called The Family Magazine. Back then pumpkins were more commonly called pompions, and it is more like some advice rather than a recipe:

Slice a pompion, and boil it in fair water, till the water grows clammy, or somewhat thick; then strain it through a fine cloth, or sieve, and with this make your Bread, well kneading the dough; and it will not only increase the quantity of it, but make it keep moist and sweet a month longer than Bread made with fair water only.

It funny that the British have always had a thing for bread that stays ‘fresh’ for as long as possible; the French, for example, expect the opposite and buy there’s once or twice daily . It goes back to the days when the old brick bread ovens were lit but once a week so the bread – and other goodies – had to last. This love for bread with a long shelf-life is also often blamed for our love of the moist mass-produced packaged breads that go mouldy before they go stale, but I digress.

I thought I would give this pompion bread a go, but I felt that boiling the poor thing to death was a bit wasteful, and I wanted the bread to have some pumpkin flavour so I roasted it, mashed it up and added it to a basic bread dough along with a little sugar and some mixed spice. It turned out to be delicious so I thought I’d give you the recipe to try. I don’t think it resembles the original recipe, but it certainly inspired me to make it. By the way, it doesn’t stay fresh for a month, but it is very much moist and edible five days later. It goes great with soup and stews or with jam or just butter spread on it.

This recipe makes 2 good-sized loaves.

What you need:

600g piece of pumpkin or other squash, deseeded weight

500g (1 lb 2 oz) strong white flour

50g (2 oz) fine oatmeal

1 ½ tsp mixed spice

25g (1 oz) fresh yeast, or 1 tsp dried instant yeast

2 tsp salt

50g (2 oz) sugar

25g (1 oz) softened butter or olive oil

225g (8 oz) warm water

olive oil

extra flour

extra oatmeal

 

What you do:

Begin by roasting the pumpkin in a little olive oil until soft – around 30 minutes at 180⁰C (350⁰F). When cooked, remove from the oven, cool, remove skin and mash to a pulp.

Mix the flour, oatmeal, mixed spice and sugar in a bowl, then crumble the fresh yeast on one side of the bowl, and spoon the salt one the opposite side. Make a well in the centre and pour in the water along with the olive oil. Notice that I have given the weights of liquids here – I’ve taken to doing this with all my baking recently; you can be much more accurate that way. (For most water-based liquids one millilitre weighs one gram. You can thank Elizabeth David for that one.) Lastly, add the cool pumpkin.

Using you hand, mix everything to a sticky dough – it will be very sticky but don’t worry.

Rub a teaspoon or two of olive oil on your work surface and turn out your dough onto it; the oil makes it easier to knead without it all becoming a hideous sticky mess. Keep kneading and adding more oil if need be. If all this seems like too much effort and mess, use the dough hook on a food mixer instead.

When the dough is smooth, do a final kneading on a little flour, then pop into a clean bowl that has been lightly coated with oil to prevent sticking. Cover with Clingfilm (other plastic wraps are available) and allow to ferment away until it has at least doubled in size.

Knock back the dough and shape into two loaves – you can do round cobs on a greased baking sheet or in greased tins, whichever you prefer. i used two cake tins so that my cobs would keep some shape.

Cover and allow to prove. Make appropriate cuts and dustings of flour or oatmeal. When doubled in size put into a cold oven. Set the temperature to 220⁰C (425⁰F) and leave for 15 minutes. Turn the heat down to 180⁰C (350⁰F) and bake for a further 15 minutes. Allow to cool on a rack completely before breaking into it.

Treacle Tart

A classic British nursery pudding, the treacle tart is much-loved. It is probably the ultimate child’s dessert because it is so unbelievably sweet; it makes my teeth hurt just looking at one! That aside, I have never really lost my sweet tooth and I love treacle – meaning golden syrup of course in this case (see here for a post on treacle). Treacle tart was very popular with poorer families – the two main ingredients being bread and treacle – no expensive fruits and spices here.

The pudding itself as we know it has only been in existence since the late nineteenth century since golden syrup was invented in the 1880s. However, the earliest recipe I have found for a treacle tart actually dates to 1879 – before the invention of golden syrup! The recipe is by Mary Jewry and is a tart made up of alternating layers of pastry and treacle. The treacle here is black treacle, and this highlights the problem in researching the origins of this pudding; treacle meant any viscous syrup that was a byproduct of sugar refinery and specifics are not always pointed out, even after golden syrup became popular. The other problem is the recipe Mary Jewry gives is nothing like the beloved treacle tart from our childhood.

Prior to the 17th century, treacle was used as a medicine; it was considered very good for the blood and was therefore used in antidotes to poisons. It starts cropping up in recipes for gingerbread in the mid-18th century. Jane Grigson mentions a gingerbread recipe from 1420 in her book English Food where spices and breadcrumbs were mixed together with plenty of honey to make a gingerbread that seems pretty similar a modern treacle tart, but without the pastry. Heston Blumenthal in his book Total Perfection also mentions a 17th century ‘tart of bread’ where bread and treacle are mixed with bread, spices and dried fruit and baked in an open pastry shell. Then just to complicate things further, Jane Grigson mentions that the predecessor to the treacle tart is the sweetmeat cake – again a 17th century invention – that uses candied orange peel, sugar and butter as a filling and no treacle or bread whatsoever!

All this confusing history waffle is giving me a headache. Here’s the recipe that I use for a treacle tart. It is adapted from Nigel Slater’s. I like it (and I have tried several recently) because it has a lot more bread in it than most other recipes – treacle tart should be chewy with a hint of   and must hold its shape when cut, many recipes fail in this respect. I use brown bread crumbs – it gives a good flavour and increases the chewiness level a little further.

There’s a pound and a half of golden syrup in this tart so the sweetness really needs cutting with some lemon juice and zest, and if you like, a tablespoon or two of black treacle; it’s not just a nod to treacle tarts of the past, its bitterness really does tone down the sweetness. This tart makes enough for ten people I would say. Be warned – if you go for some seconds, you may fall into some kind of sugar-induced diabetic coma…

For the pastry

4 oz salted butter or 2 oz each butter and lard cut into cubes and chilled

8 oz plain flour

3 tbs chilled water

For the filling

1 ½ lbs golden syrup

2 tbs black treacle (optional)

juice and zest of a lemon

10 oz white or brown breadcrumbs

The pastry is a straight-forward shortcrust. Rub the fat into the flour with your fingertips, a pastry blender, the flat ‘K’ beater of a mixer or blitz in a food processor. Mix in two tablespoons of water with your hand and once incorporated, add the last tablespoon. The pastry should come together into a ball. Knead the dough very briefly so that it is soft and pliable. Cover with clingfilm and put in the fridge to have a little rest for 30 minutes or so.

Now roll out the pastry and use it to line a 9 inch tart tin. Put back into the fridge again – you don’t have to do this step, but sometimes the pastry can collapse a bit when it goes in the oven at room temperature.

Whilst the pastry is cooling, get on with the treacle filling. Treacle can be a tricky customer: weigh it out straight into a saucepan on tared scales and then pour the golden syrup straight in. Add the black treacle if using. Place the pan over a medium heat and stir until it becomes quite runny, then stir in the lemon juice and zest and the breadcrumbs.

Pour this mixture into the lined tart tin and bake in the oven at 200⁰C (400⁰F) for 15 minutes, then turn the heat down to 180⁰C (350⁰F) for another 15 or 20 minutes.

Best served warm with cream, ice cream or custard.

Mulled Wine

There is nothing better to warm your cockles during Christmastime than a bit of mulled wine. If you have never tried it or heard of it, then you are certainly missing out on something. Mulled wine is essentially hot, sweetened red wine made aromatic with the addition of citrus fruits and warming spices such as cloves, cinnamon and nutmeg. It’s history goes right back to the Ancient Greeks.

Before mulled wine was the drink hippocras, which was supposedly invented by the Greek scientist and Father of Medicine, Hippocrates. The idea being that it was something of a tonic. The wine was either red or white and not necessarily hot either, but it was spiced and sweetened with honey. In Britain, the drink was very popular and there are several recipes for it. Here’s one from The Good Housewife’s Jewel by Thomas Dawson (1596):

To make Hypocrace

Take a gallon of white wine, sugar two pounds, of cinnamon, ginger, long pepper, mace not bruised galingall [sic]…and cloves not bruised. You must bruise every kind of spice a little and put them in an earthen pot all day. And then cast them through your bags two times or more as you see cause. And so drink it.

Not heating it up obviously meant you had plan a little ahead if you wanted to have a few goblets of hippocras at your Tudor feast.

By the seventeenth century, mulled wine recipes start to appear such as this eighteenth century recipe from Elizabeth Raffald in The Experienced English Housekeeper:

Grate half a nutmeg into a pint of wine and sweeten it to your taste with loaf sugar. Set it over the fire and when it boils take it off to cool. Beat the yolks of four eggs exceedingly well, add to them a little cold wine, then mix them carefully with your hot wine a little at a time. Then pour it backwards and forwards several times until it looks fine and bright. The set it on the fire and heat it a little at a time for several times till it is quite hot and pretty thick, and pour it backwards and forwards several times. Then send it in chocolate cups and serve it with dry toast cut in long narrow pieces.

It is strange that the Tudor recipe actually seems more like modern mulled wine that the newer one.

Well here is my recipe for mulled wine – it is difficult to add quantities as you add most things to taste. It is also quite difficult to give an official list of ingredients; you can add any warm spice you like really (I expect a blade of mace would be an excellent addition, though I have never tried it), so this recipe is more a guideline than anything.

Ingredients

2 bottles of red wine, good but not great

¼ pint of brandy

½ pint of water

2 oranges, sliced

1 lemon, sliced

2 sticks of cinnamon

½ a nutmeg broken into several pieces

5 cloves

at least 4 tablespoons sugar

In a large saucepan, add all the ingredients and slowly heat the wine, stirring every now and again to dissolve the sugar and get the flavours dispersed.

It is important not to let the mulled wine boil as the alcohol will evaporate and we don’t want that. Taste, and add more brandy, sugar or water if you think it needs it. Keep the mulled wine on the lowest heat possible to keep warm and ladle into mugs or glasses.

Decorating the Christmas Cake

Once your Christmas cake is nicely matured and well-fed on brandy, it is time to decorate the bugger. In my opinion it is best to go all-or-nothing; either don’t decorate at all or go crazy. Traditionally, in England at any rate, you need a layer of marzipan and a layer of royal icing. Though I have seen recipes that have a bakeable marzipan and no icing, which I must admit is attractive, but I keep it traditional, even though I am not really bothered about the icing. No, I do it simply for tradition’s sake.

I gave the Christmas cake recipe that I use in the previous post, so if you have made one or have a bought undecorated one that you want to put your own stamp on, I have recipes for marzipan and for royal icing too. Don’t forget to add some festive bits and bobs too.

Marzipan

Marzipan is essentially a paste made of ground almonds and sugar and it found its way in Europe from the Middle East via the Crusades. It was the Italians – specifically the Milanese – that really took to the stuff, refining the techniques to produce a very high quality product that was excellent for making into extravagant sculptures. Leonardo da Vinci was quite despondent after making some amazing and intricate marzipan sculptures for the Milanese court as he ‘observed in pain that [they] gobble up all  the sculptures I give them, right down to the last morsel.’

Aside from being used as a sculpture material, marzipan also became a popular sweetmeat used by chocolatiers and bakers. Some of my favourite cakes use marzipan: Battenburg, stollen and simnel cake. The Christmas cake got its layer of marzipan because the Twelfth Night cake – traditionally covered in it – was banned by the Puritan and Lord Protector of England, Oliver Cromwell as too frivolous, so people added the marzipan they loved so much to their Christmas cake instead.

Here’s the recipe I always use these days. What I like specifically about this recipe is that it is not too sweet, which I think the bought stuff always is. Also, when you make your own marzipan, it has a much better texture as well as flavour. You can add extra things to the mixture if you like, such as the grated zest of an orange, or a couple of teaspoons of orange flower water or rose water.

140 g icing sugar

90 g caster sugar

220 g ground almonds

1 beaten egg

1 tbs apricot jam

1 tbs water

Sieve the icing sugar into a large bowl and stir in the caster sugar and almonds. Stir in the beaten egg and lemon juice to form a paste. Knead the marzipan on a surface floured with icing sugar. Easy. Wrap and allow to chill in the fridge for a few hours.

To cover the cake with it, you first need to slice the top of your cake off so that it is a nice, flat surface. I always like that bit because I get to try the cake.

Next, turn it upside down and pop it on a cake base or plate. Warm up the jam and water in a pan and paint the whole cake with the glaze.

On a sheet of greaseproof paper, roll out a little over half of the marzipan into a round shape that is just a little larger than the cake itself. The greaseproof paper makes it easier to roll out, but you can use an icing sugar dusted worktop instead. Use the cake tin as a template and cut a circle.

Pick up the marzipan still stuck to the paper, place it on top of the cake and peel off the paper.

Next, take the remaining third of the paste and roll that out into strips the same height as the cake and secure them to the cake. Press the edges together as you go as well as any cracks that may appear.

You need to leave the cake for a couple of days to dry a little before adding the icing (should you want to).

Royal Icing

Royal icing is the classic icing for the Christmas cake – it is ‘royal’ because it was the British Royal Family that used in for their wedding cakes, and naturally if the Royals did it, then we copied it. Icing had been around since the eighteenth century; before that, there wasn’t the technology to refine the sugar appropriately. The first icing was similar to royal icing, it was spread over the top of the cake but then the cake was returned to the oven to set hard. The final result was a nice flat, shiny surface like that of a frozen lake, hence we call the stuff icing. Elizabeth Raffald mentions it in The Experienced English Housekeeper (1769) – the first written recording of the word.

Royal icing is the most popular icing because it can be piped and coloured easily. Plus it is easy to make , which a bonus. Here’s how:

2 medium egg whites

2 tsp lemon juice

500g icing sugar, sieved

Whisk the egg whites until frothy but not yet stiff and then stir in the lemon juice. Add icing sugar to the egg white bit by bit, mixing as you go – an electric beater comes in very handy here, but you can use a wooden spoon if your forearms are up to the job. The icing can be used straight away.

Spread the mixture all over the cake using a palette knife to smooth it out. Dipping the knife in very hot water is a good way of getting the icing super-smooth, but I like it a bit more rough-and-ready. You can reserve some of the icing for piping of course, but that has never really been my thing – I should have a go one time though!

A simple and effective way of decorating the cake is to use the side of a knife to make a nice spiky snow effect. When decorated, leave it for two or three days to set hard.

Bubble and Squeak

Bubble and squeak is one of my favourite left-over foods. It’s difficult to give a recipe for it as you just have to use whatever vegetables you have leftover from a nice roast dinner. It turns out it didn’t begin life as fried mashed potato patties, but as something quite different. In The complete economical cook, and frugal housewife: an entirely new system, Mary Holland – in 1837 – describes a recipe that makes use of leftover boiled beef, not potatoes. The beef should be thinly sliced and fried up with chopped boiled cabbage in butter and some salt and pepper. This recipe goes back as far as the mid-eighteenth century. Indeed recipes for it in this form run right up the mid-twentieth century. It cannot be a coincidence that the dish went from beef-based to potato-based at around the same time as the Second World War and rationing.

Well, here is my recipe for the more familiar – and surprisingly modern – bubble and squeak. It’s hard to give amounts as it is just left-overs:

You have to use some mashed potato as a base and then stir or mash in leftover boiled cabbage, broccoli, carrots or whatever you have. Good additions are kale or dulse that have been crisped up in the oven or frying pan before being crumbled into the spuds

I would say that you should keep the ratio of potatoes to vegetables at least 1:1.Though it is very delicious if all you have left is mashed potato (in my house growing up, we often had fried mashed potato sandwiches with brown sauce!).

If you like, you can stir in an egg; this is especially useful if the potato is dry and difficult to form. Season with salt and pepper.

Get some fat nice and hot in a frying pan. It is extremely important that you use an animal fat such as lard. I like to fry some bacon in the pan first and then use the fat to fry the bubble and squeak in.

You can add your mixture in a single layer or as separate patties. You don’t need any flour to help seal it as it will burn. Instead, add your mix and press it down firmly and then leave it undisturbed for at least 5 minutes. When a nice crust has formed, use a spatula to turn it over. Do this in parts – there’s no way you’ll be able to turn it in one piece.

When both sides have achieved a nice dark-brown crust, it is ready to serve up. I like it with bacon, poached eggs and a good dash of Worcestershire sauce.

The name of the dish comes from the noise it makes in the pan as it cooks – the super-hot and densely-packed vegetables create pressure that’s let out through any gaps. If you didn’t use animal fats, you can’t achieve the high temperatures that give you the bubbles and the squeaks, plus the crust isn’t quite as burnt and satisfying.

If you like, you can fry them one day, and warm them up in the oven a few days later.
