Try These Double-Cut Lamb Rib Chops

Two chops are better than one … and that’s the philosophy behind our new grass-fed lamb chops. These meaty, double-cut lamb rib chops contain two rib bones and are perfect for grilling, or pan-searing anytime.

Our new lamb chops are “frenched” and “cap off,” which means that the rib bones have been cleaned of fat and are exposed. We always say that the cleaned bone makes a good handle. It also makes for an elegant chop and an impressive presentation.

Choose your size.  These packs of 8 double-cut lamb chops feature portions in two sizes. We packaged chops from the larger side of the rack together and grouped the chops from the tapered side, which yields slightly smaller portions. This means all your plates will have uniform-size chops; nobody has to take the smallest one.

Cooking Double-Cut Lamb Chops

Pan-seared and finished in the oven, our double-cut lamb chops make perfect single servings (though some may reach for seconds).

Lamb chops this thick can be grilled, and still keep that medium-rare red inside. But you don’t want the meat at the center to be raw, so it’s a good idea to use a two-zone strategy on the grill. Pile the coals on one side of the grill, sear the lamb over them on the hot side, and then move to the cooler side and let them slowly roast.

Alternatively, a reverse sear can be employed on a grill. This is the complete opposite of the above strategy. Start the lamb on the cool side of the grill, which raises the temperature of the meat slowly. Cover the lamb chops, and they will roast ever so gently. When the lamb is 120 degrees F internal temperature, move the chops to the hot side of the grill, which will quickly give you a seared finish. If you want medium-rare lamb chops, remove them at 130 degrees F.

Of course, let them rest for about 10 minutes off the grill before serving.
