Pork Roast with Fresh Applesauce

Roasted Chairman’s Reserve pork loin with fresh apple sauce, sautéed apple, and pickled onions.

Pork Loin 

INGREDIENTS

  • Chairman’s Reserve® Pork Loin
  • Salt and pepper and spices of your choice

METHOD

  1. Truss, season liberally, and sear in a pan.
  2. Finish in the oven at 375f until desired temperature is reached 145f is a good base to pull and let rest for 10min

Apple Sauce

INGREDIENTS

  • 3-4 ea. Apples
  • pinch of Xanthan gum (optional)
  • 1 tsp. of each: Cumin, Cinnamon, Garlic powder, Onion powder (mix)

METHOD

  1. Place apples in a juicer. Add pulp and juice into a sauce pan. If not an option place into food processor. You may need to transfer to a blender after food processor. We just need to puree the apples (You can even cut them up and cook them first then puree).
  2. Add 1/2 tsp of the “spice mix” and salt and cook gently for 10 minutes. Taste, add more spices and salt if needed.
  3. Blend in xanthan gum to help hold emulsion.

Serve with sautéed apple slices and pickled onions
