Bursting with ginger and chile flakes, this simple sauce offers a savory, acidic contrast to the rich filling of mandu.

Way way too much soy sauce. Inedible.

More garlic, more ginger, 1/2 cup soy sauce, 1 tsp sugar, rest the same, for me this worked

This wasn’t great because there was too much soy sauce. It overpowered all of the other ingredients and was pretty much the only thing you could taste. I think using only 1/3 cup of soy sauce would’ve made it good.

After the comment about way too much soy sauce, I made as written — but when I got to adding the soy sauce I started with 1/4 cup. Perfect amount! So glad I didn't add more. No scallions on hand — will add next time, but fine without. Quick meal with TJ's potstickers.

I always like to season to taste. That's the fun!

Made sauce only. Used about 1/3 cup soy sauce. Delish.

I made 1/4 of the recipe and it was perfect! Added extra scallions and pepper flakes.

Everyone who said there is too much soy was right. Took their advice and added just 1/2 cup and still found it overpowering. Added 2 tablespoons of honey and more ginger and then it was great.

1/4 C soy sauce 2 cloves garlic 2” ginger 1 tsp sugar also suggested

Way too much soy sauce. 1/3 C.

Just made this. Concur about too much soy. I did 1/2 cup. Also put in a little lemon zest. Oh and if you don’t have mirin it is still good.

Agree with modifications suggested below. 1/2 cup soy sauce, 3 cloves garlic, more ginger, some honey, no water. Used this to spoon over hand rolls and later to add to a fried rice dish, and it was perfect.

I served this as a dipping sauce for Melissa Clark's Crisp Roast Duck. Loved it. Used low-salt soy sauce. Had some left over so for the next night I added it to a fried-rice dish I made with the leftover duck and lots of vegetables. I added some rice cooking wine to the sauce before mixing into the stir-fry.

Far less soy sauce for certain. Some good honey helped ours along too. Tasty,

Sauce could include ginger-scallion sauce, miso thinned with water, Sriracha mayonnaise, or plain soy sauce

Use a low sodium soy or tamari for this plus you need a very good Soy sauce since it’s the main ingredient not your average store bought variety. I used 2/3 cup it tasted great plus I let it marinate for an hour

I used all organic ingredients. 3\4 cup of soy sauce, no sugar, more garlic, more ginger 3 scallions. Fabulous with Pot Stickers!
