Serves: 6 Prep Time: 15 minutes Cooking Time: 1 hour What a nostalgic dish this is. Somewhere in the deep caverns of my mind this dish has remained tied to my very being. Well it would have, except that I had all but forgotten that it existed. I’m not sure what first reminded me of this childhood classic but what a revelation… it feels almost like it’s from a fairytale; tart jam, moist cake and sweet coconutty goodness. Yet it wasn’t a dream, this is a real pudding; albeit one that is a rare sighting these days. Steaming a pudding feels like a very British approach to me (although I’ve done no research into that), it is certainly a little more effort than a simple oven baked cake but sometimes a new technique can be very rewarding... and by Jove (to be read in your best BBC voice) is the extra effort worth it! Notes: Steaming Steaming a pudding is a tad different to your usual steaming process as it requires the steam to not physically touch the sponge batter. It is a fairly simple process once you have done it a few times but it can seem a bit complicated at first viewing. Method: 1). Prepare 6 individual pudding basins or ramekins (150ml), by greasing the insides with butter and fill the bottom of the basins with strawberry jam. 2). Cream together the butter and caster sugar in bowl until it is light and creamy. 3). Beat in the eggs one at a time; with each egg add a spoonful of the flour. 4). Add the remaining flour, coconut and vanilla. Add enough milk to to form the right consistency. You want it to have a dripping consistency - the usual you would expect from a simple sponge mix… because of the coconut it should need a little milk to loosen it up. 5). Mix these until combined and spoon into the basins on top of the jam and level the surface with a spoon. 6). Place the basins in a steamer. The water should simmer and cover ⅔ of the way up the pot so that the sponge cooks through. Steam for 1 hour. 7). Turn out the puddings onto individual plates and serve with custard, cream or ice cream. Extra Tip: To make one large (900ml) pudding, as in my case, then steam for 75 minutes.
