Homemade Matri
Ingredients

2 cups maida (all purpose flour)

3 tablespoons ghee
-
as needed water

2 teaspoons ajwain (carom seeds)

1 teaspoon black pepper powder

2 teaspoons kasuri methi

1 teaspoon cumin seeds (jeera)

1 pinch asafoetida (hing)

1 pinch baking soda
-
to taste salt

as needed oil for deep frying
Cooking Instructions

First heat the ghee or oil. Take the hot ghee and maida, all the spices, salt and baking soda in a mixing bowl.mix everything well and rub the fat evenly in the flour with your fingertips. the whole mixture should resemble breadcrumbs. the more you do this, the better texture the mathris will have.
just add 1 or 2 tbsp of water each time and only mix the dough. don't knead like a roti or poori dough.
only mix the water in the dough. -

When the whole mixture can be easily clumped or gathered together into a ball, cover and keep aside for 30 mins. Heat oil for frying in a kadhai or pan. Pinch small balls from the dough. Roll it on the rolling pin and cut it into the matri shape. Now heat oil for frying.when the oil is heated then add all matri for frying.keep the flame medium to low.cook till it crispy and golden brown.matri is ready.keep it in the airtight container and serve if needed.
