Eggless Fruit Custard (without readymade custard powder)

This ‘Eggless Fruit Custard‘ is a super creamy and easy dessert recipe. Simple handful ingredients with seasonal favourite fruits requires to make this delicious custard recipe. I have used homemade custard mixture instead of readymade custard powder for this dessert. The custard mixture can be easily prepared using corn flour, vanilla essence and yellow food colour. Use of food colour is completely optional, rather I skipped it and used saffron instead. Saffron is one of my favourite ingredient; it not just adds lovely yellow shade moreover gives wonderful aroma to the recipe.

In this post; I have shared my detailed recipe of eggless custard without any store bought custard powder. This creamy, lightly sweetened custard will be ready under 45 minutes and can be chilled in refrigerator. So, it’s a party-friendly recipe; make a big batch in advance and serve chilled to your guests later. Enjoy this cold dessert with fresh seasonal fruits of your choice. I like to add banana, apple, grapes, pomegranate in my custard but one can use other fruits as well. But avoid using watermelon as it releases water; also citrusy fruits can be avoided. Give a shot this wonderful, delectable eggless custard recipe and enjoy it with your loved ones!!

Fruit custard

Ingredients:

1 litre full fat milk

5 tbsp corn flour

3/4 cup sugar

2 tsp vanilla essence

Few saffron strands

Water for mixing

Fruits as per choice

Method:

Prepare Custard Mixture – Take corn flour in a mixing dish and gradually add water into it. Make a lump free mixture and add vanilla essence into it.

If using food colour then add it into this mixture. (I have used saffron strands instead which I will add later.)

Take milk in a sauce pan and heat it over medium-low flame.

Once milk is warm, gradually add custard mixture into the saucepan.

Turn heat to low and continue stirring it together.

Meanwhile, mix saffron strands with little hot milk.

Continue heating milk and custard mixture over low heat. Stir it continuously, to ensure custard mixture is not sticking to the bottom of pan.

Saffron releases its yellow colour, add that saffron milk to the saucepan.

Once saffron milk is added to the saucepan; boiling milk changes colour to yellow.

Now, add sugar in the saucepan while stirring continuously.

After few minutes, milk starts boiling and it will turn thick & creamy. Cook it until raw taste of custard mixture is gone.

Keep heat low throughout the cooking while stirring it continuously.

Once milk starts bubbling, test taste to ensure powder like taste of corn flour is gone.

Turn off the heat and allow it to cool down to room temperature. Later you can chill it in the refrigerator. Once custard cooled, it will further turns thick and creamy.

Cut your choice of fruits and serve them with cold custard. Our Fruit Custard is ready.

Notes

  • Boil milk over low heat throughout the process.
  • Heat the milk until it starts slightly bubbling and raw taste of corn flour mixture is gone.
  • You can either use yellow food colour or saffron. I prefer to use saffron as it adds aroma along with yellow shade.
