Whipped Cottage Cheese Toast

SAVORY WHIPPED COTTAGE CHEESE TOAST w/ balsamic blistered tomatoes and fresh basil 🍅🌿 put it on pan toasted sourdough and enjoy! Details below.

For the whipped cottage cheese:
1 C cottage cheese (whole milk, I use @good_culture)
1 tbsp olive oil
1/4 tsp oregano
Salt and pepper

For the toast:
Sourdough slice(or bread of your choice)
1 C sweet cherry tomatoes
1/2 tbsp olive oil
1 tsp balsamic vinegar (a splash)
Salt and pepper
Fresh basil, chopped

Start with the tomatoes. Heat up olive oil in a pan on medium. Add in tomatoes and season with salt and pepper. Add in balsamic vinegar and mix. Let them cook for 5-10 minutes until they start to blister/ cook down. Reduce heat and let simmer for another 5.

While tomatoes are cooking, whip that cottage cheese. Add cottage cheese, olive oil, and spices to a food processor or mixer. Blend until smooth and creamy. Takes less than a minute.

Toast sourdough. I love pan toasting it with some butter, but any method works. I added it to the same pan as the tomatoes.

Spread a thick layer of cottage cheese on top followed by the blistered tomatoes, fresh basil and ground pepper.
