Sopapillas with Honey

Ingredients

  • 3 cups all-purpose flour
  • 1 Tbsp baking powder
  • ¾ tsp salt
  • 2¼ tsp ground cinnamon, divided
  • 3 Tbsp shortening
  • ¾ to 1 cup warm water
  • Vegetable oil, for frying
  • 1 cup sugar
  • Honey

Instructions

  1. Pulse flour, baking powder, salt, and ¼ tsp cinnamon in a food processor until combined.
  2. Add shortening, and pulse until mixture is crumbly. With processor running, gradually add ¾ cup warm water, processing until combined, adding additional water if needed. Process dough just until it comes together; cover and let stand 30 minutes.
  3. Roll out dough to ⅛-inch thickness on a lightly floured surface. Cut into 3-inch squares.
  4. Pour oil to a depth of 4 inches in a large Dutch oven; heat over medium heat until a deep-fry thermometer reads 380°F.
  5. Fry dough squares, in batches, 1 to 2 minutes per side or until puffed and golden brown. Drain.
  6. Stir together sugar and 2 tsp cinnamon in a shallow dish. Toss hot Sopapillas in sugar mixture to coat. Serve immediately with honey.
