Ingredients
- 1 (½-lb) salmon fillet, patted dry
- ¼ tsp kosher salt
- ¼ tsp freshly ground pepper
- 1½ Tbsp butter, softened
- 1 clove garlic, minced
- 1 Tbsp finely chopped fresh parsley
Instructions
- Preheat grill (or grill pan) to medium-high. Sprinkle fish with salt and pepper.
- Grill fish, skin sides down, 3 minutes. Turn fish over, and grill 2 minutes or until flakes with a fork. Combine butter, garlic, and parsley; spread over fish before serving.
Side Dish Ingredients
- ½ lb honey gold potatoes, quartered
- ½ lb broccolini, cut into 2-inch pieces
- 3 Tbsp olive oil vinaigrette
- 1 tsp Italian seasoning
- 2 Tbsp chopped fresh parsley
- ¼ tsp freshly ground pepper
- ¼ cup freshly grated Parmesan cheese
Side Dish Instructions
- Place potatoes and ¼ cup water in a microwave-safe bowl; cover with plastic wrap leaving a small vent. Microwave at HIGH power 6 minutes.
- Add broccolini to potatoes; cover, and microwave at HIGH power 2 to 4 minutes or until potatoes are tender when pierced with a fork. Drain.
- Gently toss potato mixture with remaining ingredients in a serving bowl. Serve alongside fish.
