Siki (fish): "Siki" is the commercial name of the shagreen shark, a saltwater fish of the Squalidae family (Scientific name: Centrophorus granulosus), which lives in the Atlantic, from Iceland to Senegal .
Sometimes confused with salmonette (dogfish or issusole), although it is larger, this fish is boneless and can be prepared in matelote, grilled, sautéed, pan-fried or braised.
