Marennes Oysters ; Oléron Island

Marenne Oysters have different sizes and can be tasted during the whole year.

The maturing in “clears”: Which make the specificity of oysters is the maturing in “clears”. “Clears” are small clay-made basinsd where oysters finish growing. The flavours of Marennes oysters are linked to the time oysters spent in the Clears.

An unique taste: We can basically consider 2 different kind of oysters: The “fines de claires” stayed 1 or 2 months which developed a firm flesh and a nut tasting. Then the “spéciale de claire” matured during at least 2 months which flesh if firmer and the flavor stronger.

Both of them participate to the Marennes-Oléron Oysters famousness and make them a unique quality product.

You can eat oysters with lemon, bread, butter… but the best way remains eating them alone.
