Apple Pudding Bake with Apple Brandy Sauce

Ingredients:

1/4 cup butter

1 cup sugar

1 egg

1 cup flour

1 teaspoon baking soda

3/4 teaspoon ground nutmeg

1/4 teaspoon salt

4 cups chopped, unpeeled apple (about 4)

1/4 cup chopped pecans

Apple Brandy Sauce, recipe below

Directions:

In a large mixing bowl, beat butter or margarine with an electric mixer on medium speed for 30 seconds. Add sugar; beat till well combined. Add egg; beat well. In a small bowl, combine flour, baking soda, nutmeg, and salt. Add to creamed mixture. Beat on low speed till combined.

By hand, fold apple and pecans into batter. Spread in a greased 8 x 8" baking pan.

Bake in a 350 degree oven for about 55 minutes or till golden brown. Cut into 9 squares. Serve warm with sauce.

Apple Brandy Sauce:

In a small saucepan, melt 1/2 cup butter. Stir in 1 cup sugar and 1/2 cup half & half. Bring just to boiling over medium heat. Reduce heat and cook for 3 minutes, stirring occasionally. Remove from heat. Stir in 2 tablespoons apple brandy, 1 teaspoon ground nutmeg, and 1 teaspoon vanilla. Spoon over warm pudding. Makes about 1 1/2 cups sauce.
