The name Cervaro derives from the noble family that owned the Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place.

Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and aging in barriques with the first vintage in 1985. Cervaro della Sala 2019 is pale yellow in color with notable greenish highlights. Its intense, complex nose shows notes of citrus fruit, pineapplesand acacia blossoms that blend harmoniously with hints ofvanillaand flint. On the palate, it’s generous, refined and well structured; pleasantlysavory notesare well-balanced bytypical sweet sensations of hazelnut butter.

This is very aromatic and lifted with mineral, nougat, floral, and lightly cooked apples. Some flint and matchstick. Medium- to full-bodied with a fine phenolic and acid backbone that energizes the wine. Complex aftertaste with subtle fruit and pastry at the end.
