Step 1 – Start by placing potatoes and carrots in a large saucepan. Cover them with water and heat until it boils, then lower to a simmer. Let them cook for 15-20 minutes, just until they’re tender when poked with a fork.

Step 2 – After draining the water, it’s time to mix in the other ingredients. Add mayonnaise, chopped boiled eggs, diced ham, dill pickles, and sweet peas. Sprinkle in some fresh dill, salt, and pepper. With a spatula, gently stir everything until it’s evenly mixed.

Ingredients 

  • 4 medium potatoes, washed, peeled, and cubed
  • 3 medium carrots, washed, peeled, and cubed like potatoes
  • 1 cup mayonnaise
  • 3 hard boiled eggs, chopped
  • 1 cup diced cooked ham, or summer sausage
  • 1 cup diced dill pickles
  • 1 cup sweet peas, frozen or canned
  • 1 teaspoon fresh chopped dill
  • 1 pinch salt, to taste
  • 1 pinch black pepper, to taste

Instructions

  • In a large saucepan over medium-high heat, add potatoes and carrots. Fill saucepan with water until vegetables are submerged. Bring to a boil, then reduce to a simmer. Allow to cook, stirring occasionally, for 15-20 minutes or until vegetables are fork tender.
    4 medium potatoes, 3 medium carrots
  • Drain water from saucepan. Add mayonnaise, boiled eggs, ham, dill pickles, peas, dill, salt, and pepper, then use a spatula to gently mix ingredients together until combined.
    1 cup mayonnaise, 3 hard boiled eggs, 1 cup diced cooked ham, 1 cup diced dill pickles, 1 cup sweet peas, 1 teaspoon fresh chopped dill, 1 pinch salt, 1 pinch black pepper
