  • 1 whole chicken cut into 8 pieces
  • 500 ml thin coconut milk
  • 2 bay leaves
  • 2 lemongrass stalks bruised
  • 250 ml thick coconut milk
  • 2 tsp salt
  • Fried shallots for garnish

Spice Paste:

  • 2 cm turmeric
  • 10 shallots
  • 6 cloves garlic
  • 1 tsp white pepper
  • 1 tbsp coriander seeds roasted
  • 2 cm ginger
  • 3 candlenuts roasted
  • ½ tsp cumin seeds roasted

  • In a pan, sauté the spice paste until fragrant. Add bay leaves and bruised lemongrass, cook until the paste is well-cooked.
  • Add the chicken, cook until the chicken changes color.
  • Pour in the thin coconut milk, stir gently to avoid curdling. Cook until the chicken is tender and the coconut milk comes to a boil.
  • Pour in the thick coconut milk, cook until it reaches a boil. Add salt, stir well, and then remove from heat.
