The phrase “locally owned and operated” is something that I’ve been thinking about a lot lately. I feel like every publisher’s note I write speaks to this on some level, but ultimately what I’m trying to say with each of these I write is that the unique local focus of our restaurant industry is a big part of what sets Hilton Head Island apart. You’ll find the odd chain restaurant here and there on the island, but for the most part our restaurants are run by some of the most hardestworking people you’ll ever befriend. And you can’t help but befriend them. Part of my job is stopping in to visit these folks, catching up on what’s new and replenishing the magazine racks they so graciously let me keep at their restaurants. And with every visit, I’m amazed at how little of our conversation revolves around business. Because here we’re all neighbors. We’re all locals. We know each others’ families, and we care about what’s happening in their lives. And the folks running these restaurants are not just a vital part of our community, they’re a shining example of the hard work so many in their industry put in each day in making Hilton Head Island a true culinary destination.

Whenever I feel like publishing is hard work, these folks remind me of what hard work really looks like. They’re in the trenches, checking on deliveries, seating customers, taking orders, working in the kitchen and even dealing with the guy from Taste of Hilton Head who wants to come in and chew the fat. And to see them in action is to see what real passion looks like. Even with supply chain nightmares, soaring food costs and labor shortages, they are hard at work with a smile on their face every day. We didn’t invent “locally owned and operated” on Hilton Head Island, but our restaurateurs sure have perfected it. The rest of us are just the lucky beneficiaries of their hard work, dedication and mastery of their craft. I hope that each and every one of you experience the same pleasure that I do when venturing out for your next meal and who knows, you may make a new friend in the process.

A whiz in the kitchen, she quickly welcomed Earl with open arms. “She was just a great Southern cook,” he said. “When I first met my wife, her mother was in the kitchen cooking and she kept speaking in this French creole language. I asked my wife, ‘What is she saying? Is she talking about me?’”

“This restaurant was named…” he began before a lump in his throat choked off the speech he’d been giving to the assembled crowd. “This restaurant was named for (my wife’s) mother.”

The décor also carries hints of New Orleans through wrought iron accents, but the rest is the same upscale coastal chic that have made Nightingale’s other restaurants such a hit.

Earl Nightingale has worn a lot of hats in his time as a restaurateur. Along with his son Alex as well as the rest of his family, he’s raised places like Ela’s, The Pearl in Bluffton and Roadhouse in Beaufort to legendary status in the Lowcountry’s culinary community. But he’s not just the front of the house “face of the company.” You’ll find him doing everything from hammering in nails to helping plate dishes in his operation.

He’s been a lot of things. During the opening of Celeste, however, he became something that those who know him might not have thought possible: He became speechless.

“All of our restaurants do a higher-end caliber of dish we call coastal cuisine. You can never get away from scallops, grouper, steamed lobster, and of course our steaks” said Nightingale. “But we are going to have five or six dishes that carry a little bit of that Cajun creole influence. Jambalaya, Crawfish etouffee, New Orleansstyle BBQ shrimp (head on, in a rich red sauce)…”

“I like to look at a restaurant as a whole sensory experience – it all has to come together,” he said. “With Ela’s we have the water view, so we just wanted the inside of Celeste to have enough of those visual pearls.”Andit certainly did, with walls of crisp white shiplap encircling dining that doesn’t feel overly contemporary or pretentious, but embraces the upscale. To one end of the massive footprint, a gargantuan bar serves up a litany of craft cocktails and boasts a side stage for live music. At the heart of the dining room, a glass-walled wine cellar offers private dining as well as a showcase for some of the fantastic wines on offer.

Nightingale needn’t have worried. “She was just telling us what she needed from the store,” he said with a laugh.AsCeleste’s name is on the wall, her namesake restaurant will carry some of her Cajun influence to a menu that should seem very familiar to anyone who has dined at Ela’s or The Pearl.

Old Fort Pub closed, Nightingale saw a gap in the market for high-end dining on the north end and seized the opportunity. And thus began five solid months of painting, repairing, creating and beautifying. And Nightingale, far from being just the guy who gets to give speeches at the opening, was in there nearly every day working away to see his vision brought to life.

“The building was in surprisingly good shape – we did have to put a new roof on… but all the air conditioning units, the walk-in fridge and the drainage system all worked,” he said. “It troubled our heart to see such a nice facility in a great location sit vacant for so Whenlong.”the

“This is really just a nice hobby for us,” he said with a laugh. “We get excited about serving and making sure people just have a good experience. We just enjoy what we do.”

It’s a stunning space, made all the more fascinating when one remembers that this had previously been the north end Outback Steakhouse, which shuttered before Hurricane Matthew and never reopened. Looking at Celeste now, it’s hard to believe that before this transformation it had sat derelict for six years.

Something tells us Celeste would be proud of what’s been created in her name.

Somewhere out there is a man — maybe someone reading this magazine, maybe even you — who played a gigantic role in the history of Kenny B’s and probably doesn’t even know it. In November of 1999, with the fledgling Cajun restaurant still trying to find its fanbase in its first year, chef and owner Kenny Ballard received a phone call from this mystery man that would change the entire trajectory of his“Irestaurant.hadaguy call me and I don’t know who it was. But he wanted to know if I could fry a Turkey. This is a true story. Just reached out of the blue,” explained Ballard, unwinding among one of his restaurant’s festive outdoor tables. “And, and of course we knew how to do it, but we weren’t. I wasn’t even open on Thanksgiving.”

But it sparked something in Ballard. The next day, with a week to go before Thanksgiving, he placed an ad in the paper for a full Cajun Thanksgiving special – a fried turkey, with jambalaya, gumbo and dessert for $80.

A tradition was born, one that now sees the staff at Kenny B’s (as well as Ballard’s friends and family) coming together in an all-handson-deck situation to fry up north of 300 turkeys every Thanksgiving Day. This day has become such an important one for the restaurant, if you venture back behind the counter, you’ll find an entire back kitchen that sits uninhabited and

“We started with nothing,” he said. “I cashed it all in to open this restaurant. And when you feel that way about a place, and survive things like 9/11, the 2009 recession… you don’t want to give it up because you know what it was like when you had nothing. That is part of the longevity and sometimes that’s what keeps me going, remembering when I was bouncing 40 checks a month.”

“Nobody thought we would make it when we opened,” said Ballard.Nearly a quarter of a century later, no one is saying that now.

These days, Kenny B’s is a little less dependent on its annual turkey fry-up to stay in the black. As an island institution, it has spent the last 23 years building a loyal, dedicated and hungry following. You might point to the mouth-watering Cajun food, as authentic as you’ll get this side of the bayou, as their secret sauce. You might credit their Sunday brunches, a die-hard weekly tradition of locals and hungover tourists alike. You might even credit the freewheeling atmosphere at Kenny B’s, or their proximity to the beach. Ballard has his own theories.

“Back in the day, that one day would keep me afloat,” said Ballard. “I’d love to know who it was that first called me because that’s what shot me the idea.”

He adds, incidentally, that Coastal States Bank was a huge help in working with him during those lean days. “They kept me going.”Andthat help let Kenny B’s leave the lean times in the rear view, having posted it’s two highest-grossing-sales years in the last two years. And that was before someone went and built that dazzling new Lowcountry Celebration Park just a few feet away from his front door. So what impact will that have on Kenny B’s bright future, especially given the loss of the BI-LO at the heart of the plaza it calls home? Ballard is tight-lipped, but optimistic.“Wedon’t have an anchor tenant here now, but you come in here on the weekends and it is packed,” he said. “So maybe it helps, maybe it doesn’t. But I do like that they cleaned all that up over Spokenthere.”likesomeone who has guided his restaurant through highs and lows on the strengths of his mouth-watering food, his wife’s magnetic personality and unyielding work ethic. Through all the trials and tribulations, however, one thing that has never wavered has been the unique position Kenny B’s holds in the hearts of islanders and visitors.

“I would say working with my wife (Laverne) was the secret on that,” he said. “She’s my left, I’m her right. And she cooks as good as I do. A lot of people don’t realize that.”

And while Laverne does certainly play her vital role in the restaurant, running the front of house and serving as the smiling face of the restaurant to customers, it takes more than true love to keep a restaurant going on this island, a place that can be a bit fickle at times. Ballard knows this, having been a part of the island’s restaurant scene since he first arrived here. And he knows exactly what it took to keep the lights on at Kenny B’s.

“This year we gave away seven scholarships to high school graduates and we try to continue that,” he adds. “Everything that we make we give back to local charities on the Island and in Bluffton which is what we’ve done for many years, it’s something we always do.”

Month by Congressional proclamation in 1989 as a time to recognize the contributions and achievements of Italian immigrants and their descendants in the United States. In 2015, former South Carolina Governor Nikki Haley took it a step further and made the proclamation into state law with the support of the IACHH.

Proceeds from the Italian Heritage Festival, Bocce Tournament and Italian Sunday Dinner are returned to the community in the form of several scholarships for collegebound high school students or donated to more than a dozen area non-profits, including The Deep Well Project, The Children’s Center, Bluffton Self Help, Girls Scouts of Eastern South Carolina, Hilton Head Baseball Association, The Heritage Library, Treat the Troops and many others.

A lot of the restaurants have been with us for years and give us silent auction items. There are a lot of partners on the Island that have been with us for years and contribute to us and help us.”

A non-profit service organization, the mission of the ItalianAmerican Club of Hilton Head is to promote Italian heritage and culture, while raising and distributing funds to local scholarships and charitable organizations in the South Carolina Lowcountry. A few months ago my husband retired from the Air Force after 23 years of service. He flew his last flight in the F-15 Eagle and received his final salute. When I say we celebrated this accomplishment, I mean we CELEBRATED! People flew in from all over the country, family members gathered, stories were shared, old photos passed around, and a glass or two was raised to toast the occasion. Not many of us will have such a clear and specific closing of a chapter in our lives. Sometimes the transitions from one role or phase to another just slowly fades. Other times an accomplishment or achievement feels small or unimportant.

Drink more water. Set a goal to drink at least one glass of water before every meal. This will clear your skin up, aid in your digestion, and also help you be more aware of feeling full during a meal. See how many days in a row you can hit this goal and celebrate with some friends when you’ve made it a week straight.

Walk a few more steps. Did you know that walking even just 20 minutes after a meal will increase your metabolism? I wrote about metabolism in all of the 2017 Taste articles, but long story short, keeping your body burning energy is key in feeling good physically and mentally. Set a goal to get that 20 minute walk in at least once daily, maybe even invite a friend to join you. In this case, the habit itself might become a celebration. Try a new recipe. Can we admit how easy it is to get in a rut with food? Chicken on Monday, pasta on Tuesday, and so on, week after week. Trying new recipes and new foods gives you exposure to a variety of nutrients, and also keeps fun and excitement in your kitchen. If you need a place to start Chef Karla shared a new recipe on page 59 in this magazine. Inviting friends and family to try something new is a fun way to enjoy a healthy habit. What habits do you have that deserve a spotlight? What small step have you made that warrants a celebration? We should make celebrating every success a healthy habit as well.

If I have learned anything from spending time with fighter pilots, it is this: celebrate everything. If someone is important to you, say it. If something is important to you, cherish it. If there is something you want in your life, let people around you know and then go for it. This goes for the wellness habits in your life as well. The social media feeds lead us to believe that 30 day transformations of wellness and weight loss are all around us. That a newer, better you is right around the corner, and that when the overhaul is complete you can celebrate then. But I’m here to remind you that the YOU you are today deserves a clap on the back. But once a year, for those who support Bluffton Self Help’s mission to help lift up neighbors in need, Hewitt Oaks becomes a much more literal feast.

The sixth celebration of Bluffton Self Help’s continuing commitment to the community is a culinary carnival.

How a little boiled peanut company in Bluffton is heating up an age-old Southern tradition.

Lauren Marcinkoski remembers driving onto Tybee Island back in the day, stopping by to greet the unofficial welcoming committee of roadside boiled peanut vendors. These ramshackle stands once met every visitor to the island, serving up some piping hot southern culture right out of the crock pot. No doubt those of you who have been Hilton Head Island locals remember a similar welcome when heading on island. That roadside peanut vendor was once a staple of the South, sending visitors on their way with a belly full of that inimitable snack food that once defined the region. Blissfully robust and salty, like mashed potatoes in pill form, the classic boiled peanut is one of those treats that connects us all to the first time we made our way to the area. For us newcomers, it’s the taste that helped us fall in love with the South.

Over time, Marcinkoski noticed fewer and fewer peanut vendors as she drove onto Tybee. Pushed out by the big developments and the ceaseless march of progress, they were quickly becoming a thing of the past. She wasn’t about to let that happen.

“The team and the whole group there are very supportive of local startup companies,” she said. “A lot of stadiums had boiled peanuts in the past, but the old crock pot model made it very labor intensive.”

“We started with a few concerts before the season starts, and it’s been the second or third top-selling item in the stands,” she said. “It’s not just a concept anymore.”
