PUBLISHER’S NOTE When I look back over the last year or so, there are two immutable concepts that come to mind. The first is the law of supply and demand. Most of us have at least some passing concept on it – as supply goes up, demand decreases. As demand goes up, supply decreases. It’s economics 101. This past year, we saw how that law applies to toilet paper. And hand sanitizer. And paper towels. And flour. You get the picture. It’s hard to remember any time in my life where the laws of supply and demand were so elegantly laid out as they were last year, when shoppers were hoarding as much as they could and secret whispers flew everywhere over which grocery store had fresh TP in stock. We’re still seeing how well this law plays out in the real world thanks to the absolute tsunami happening in the real estate market. Legions of new islanders have descended from the wintry climates up north, snapping up every available home, villa and condo, driving prices sky-high. This is great news for realtors, but not for the local restaurant industry, which was already struggling to find employees before the one-two punch of a pandemic and soaring cost of living. But that brings me to the second immutable concept that has been on my mind: When the going gets tough, the tough get going. There were more than a few challenges over the past year for restaurant owners and their employees, whether it was making ends meet during lockdown, reopening under vague and sometimes contradictory rules from the state and even sourcing ingredients through disrupted supply chains. But each of our area restaurants responded to these challenges with inspiring grit and determination. I’m hopeful that those new islanders and the visitors we welcome will try to see the monumental effort it took to keep those doors open and continue serving. Rather than rolling their eyes at empty tables and longer wait times, I hope they’ll see the server who has worked seven days straight, the chefs getting orders out with a skeleton crew and the restaurateur who has spent the last year chasing down PPP loans. I’m proud of the people who make our food and beverage community so strong, and the lengths they have gone to continue putting out a quality product. It’s this spirit that sets our island’s restaurants apart, creating a culinary scene that could go dish-for-dish with any big city in the world. As you enjoy the results of their hard work this summer, I hope you’ll take the time to enjoy the experience and keep demand for our legendary restaurants humming into the next year.

A New Look at

THE OLD OYSTER FACTORY An iconic island institution gets a makeover. BY BARRY KAUFMAN

When it comes to change, there are two schools of thought. The first perspective is, “If it ain’t broke, don’t fix it.” This is the philosophy that values consistency over progress, recognizing that what came before is worth preserving and must be protected. The second perspective is, “If you’re not moving forward, you’re dying.” Those who follow this train of thought fear stagnation over everything else, always aiming for the prizes of progress. When you’re dealing with an icon as beloved as The Old Oyster Factory, you have to honor both schools of thought. On the one hand, this is a restaurant that has spent decades defining Hilton Head 12

Island’s cuisine, with every square inch representing a treasured memory for some patron. On the other hand, even icons have room for improvement. “In my opinion, the old back deck was one of the most wasted pieces of real estate on the island,” said General Manager Andy Love. Not so much any more, where the deck which once served more or less as a holding area for those awaiting a table has been brilliantly transformed into one of the most breathtaking outdoor dining venues on the island. Amid the Broad Creek scenery that has made the restaurant such a treasure, the deck has expanded to full service, with a wide wraparound bar at its

core anchoring pure happy hour bliss. And while it’s the most visible change to have swept The Old Oyster Factory as part of its massive renovation this past spring, its certainly not the only one. “COVID kind of made us reinvent ourselves,” said Love. “It was really an opportunity to redo our entire way of thinking.” With CRAB Group taking ownership of the venerable restaurant in September of 2019, the time was ripe for a refresh. The décor was essentially stripped down to the studs, with tables and chairs that had been in place since the restaurant’s late ’80s debut being 86'd for newer furnishings. With the help of CSH Designs the old


traditional bar was converted into a world class oyster bar and has been thoroughly modernized and rebuilt, with the marble slab of the bar top complementing finishes of hardwood and tile in a completely redesigned space. “That view has always been a huge part of the appeal,” said Love. “With the bar and the changes in the dining room, we’re able to really maximize that view.” It wasn’t just a matter of changing a few things around and updating. As part of the redesign, The Old Oyster Factory has added an entirely new aspect to the dining experience: an oyster bar. Considering oysters are their middle name, it’s a natural fit. “We used to carry four varieties of oysters, now we’re up to eight,” said Love. They run the gamut from the local flavors supplied by the Mitchell family, as they have been for years, to more exotic types from Prince Edward Sound to the

west coast. You don’t even need to make an evening of it if you want to try the oyster bar – it’s part of another new tradition established during this reawakening: lunch. Alongside it, you’ll find sandwiches, salads and select entre´es for your midday indulgence, each of which is prepared with the restaurant's new and improved approach to seafood. “From the ground up, it’s a whole new menu,” said Love. “We have completely revamped the whole thing. More modern, focused on local fresh ingredients... we’re able to make it a lot more seasonal.” Seasonal flavors and local ingredients form the foundation of a completely new experience, one that honors the legacy of The Old Oyster Factory while expanding on it in new and exciting ways. With menus printed up daily to reflect this modern approach, you’ll find items Love presented with a Lowcountry twist. At dinner, you might try oysters Rockefeller with local collards and pimiento cheese. At lunch, possibly a Lowcountry cheesesteak with peppadew peppers. And there’s never a bad time of day to try the SeaCuterie Board, boasting smoked shrimp, tuna

poke, ceviche, smoked salmon and crab salad. Another new addition is the fabulous Sunday Brunch served from 11 a.m. until 2 p.m. As much as has been changed, modernized and updated during the last few months at The Old Oyster Factory, the things that made it truly iconic have remained. “I think what’s always made the legacy here is the people,” said Love. “I have line cooks and sous chefs that have been here 20 years, managers who have been here forever. That’s unheard of in food and beverage.” From the décor to the menu to the expanded outdoor dining experience, walking into The Old Oyster Factory today is like walking into it for the first time. Plantation Café & Deli BREAKFAST with the Family

In the restaurant business, you have to pay your dues. Washing dishes, cutting veggies, taking out garbage, scrubbing bathrooms… these are the wages of success. There are no shortcuts. To look at the Neeley family is to see the proof of that. Hard work, paying dues and never taking shortcuts pay off. It’s how this one family has amassed a portfolio of restaurants across the Southeast, including Plantation Café & Deli’s three locations, Callahan’s and Savannah’s Original Pancake House. Before he opened his first island restaurant, Vic Neeley had already paid 27 years’ worth of dues working his way up through the ranks at Waffle House. By the time he stepped away from the company, he was a vice president. Having a dad in the boardroom didn’t stop Vic’s son Darrell from paying dues; he started out washing dishes just like everyone else. When Vic ventured out from Waffle House on his own and Darrell finally got his shot at running the kitchen at Callahan’s, it was nothing that was given. Make no mistake, it was earned. That’s not to say it didn’t have its perks. “I was 19, living in Winston-Salem, and my dad said, ‘Want to go live by the beach and run a kitchen?’ I mean, who’s going to say no?” said Darrell. “I was able to have a lot of freedom, but it was also pretty daunting because I had a lot of responsibility at that age. I didn’t go to college. I went to the school of Callahan’s.” He would pay his dues in the kitchen at Callahan’s before taking the reins at the iconic restaurant the family had purchased, Plantation Café & Deli.

COMFORT FOOD

Perhaps the most interesting aspect of the Plantation Café & Deli empire is the way each restaurant represents subtle variations on a theme. That theme, of course, is good oldfashioned Southern style comfort food. Warm, buttery stacks of fluffy pancakes. Tender yet crispy bacon that seems to melt in the mouth. Sizzling sausage, fresh from the skillet and redolent with subtle spices. And we haven’t even gotten to the lunch menu yet, with its mouth-watering soups, salads and sandwiches that tantalize with their inspired spins on deli classics. It’s fare that simply tastes

like home, and it’s a common thread that runs through three locations that each stand apart. The new Bluffton location, set smack-dab in the middle of the red-hot Buckwalter Place development, echoes the sense of Lowcountry sophistication sweeping the mainland. “They call it the cottage look,” said Vic. “We were looking for nice, casual, comfortable… we serve comfort food.” The north end location, meanwhile, carries the wall of glass found in every one of Port Royal Plaza’s storefronts, adding opportunities for people watching to the exquisitely comfortable atmosphere. And then, of course, there is the original south end location, which has anchored the island’s breakfast scene since 1974. “It was originally a gas station,” said Darrell. “In fact, my walk-in cooler was the one that was used in the gas station – it still has the doors.” It’s this flagship location that will soon see a dramatic facelift, although it has been by Darrell’s admission a long time coming. A first attempt at renovation was stalled when construction began on the new Courtyard Marriott nearby. “They said they were going to give us plenty of notice when the hotel was coming,” said Darrell, adding with a laugh, “On January 4, 2019 they came knocking on the door saying, ‘We’re starting construction tomorrow.’” Delayed twice more, first by construction of the new Bluffton location and then by COVID, work will begin soon on refreshing the South End. And it couldn’t come at a better time. “That whole area is poised for a couple of serious summers coming up,” said Darrell. “Especially with that park. It’s a great thing the town did.” Once it’s completed, the south end location will share more than a passing resemblance to its mainland sister. “We’re taking the Bluffton location as our standard,” said Darrell. “We’re trying to standardize the cafés to where, in theory, if someone reached out about franchising or we wanted to put one in Charleston or Pooler, we could. I think there’s tons of room for growth.”

ALL IN THE FAMILY

If there is growth coming for the Plantation Café & Deli brand, there are plenty of Neeleys to carry it forward. Darrell’s brother William joined the team a few years back and has been running the show on the north end. “It’s fun working with family because you can really get angry with each other and act like boneheads,” said Darrell with a laugh. “Having my brother involved… he’s been in the restaurant business throughout his life.” Together, the brothers prepare to carry the restaurant empire into the future once Vic retires. Or at least gets as close to the concept of “retirement” as he can. “He’s never going to retire. He’ll be coming in here five days a week,” said Darrell. But that’s just a part of the dues the Neeley patriarch has paid. For decades, climbing the ranks at Waffle House was a 24/7 occupation, and family time was sometimes the unfortunate sacrifice. By paying those dues, however, he has allowed his sons a better life. “I love the hours, being able to go into work, put in an honest day and still be able to sit with my family at the dinner table,” said Darrell. “I want to just make sure my brother and myself can spend time with our families. Which a lot of people in our industry are robbed of.” And of course, keep the empire growing for the next generation. “Right now my son isn’t old enough to talk,” said Darrell. “But when he can, he’s going to learn how to wash dishes.”

At a certain age, hormones start to have a mind of their own. Or maybe it’s more accurate to say that they no longer have your happiness in mind. The aging process sets in and manifests differently for every person, but there are several things you can do to keep your brain and body firing on all cylinders as you move through the different stages of aging. The medical community discusses hormones as if they exist in silo. Testosterone is X, estrogen is Y, progesterone is Z… and while those numbers are technically correct and provide a valid data point, this doesn’t shed light on how hormones behave in your body. It is more accurate to picture a spider web, interconnected in infinite ways, where even the smallest change in one hormone pulls and tugs on each of the others. Your body is a miraculous creation, but also an endless puzzle once you start to manipulate hormone balance on your own. If you are experiencing the onset of hormonal changes, first and foremost you are not alone. And second, there are several things you can do nutritionally to ease the impact of what is taking place in your body*. Add one Brazil Nut to your day. Back by Popular Demand The decades-long restaurant journey of Giancarlo and Nancy Balestra seemed over when they closed Gusto. Turns out, it was just beginning. BY BARRY KAUFMAN

We all remember where we were on April 7, 2020 when our phones suddenly blared with an emergency message from the state of South Carolina: “Go home. Stay Home. Travel only for work & essentials. Virus spreading in all SC Counties.” Despite the fact that all “non-essential business” had been ordered closed earlier that week, for many of us that was when it all became real. For Giancarlo and Nancy Balestra, that message meant they had reached a crossroads with their restaurant, Gusto. “Basically we went from being very busy the night before to being without a job,” said Giancarlo. “With the new rules from the governor, our seating had been limited to 15 people. You don’t pay a lot of bills with that. We had to reach a drastic decision… We had to decide to just let it go.” With heavy hearts, they shuttered the restaurant they had just opened two years prior to tremendous accolades. The latest venture for a couple who had been running restaurants together for decades, Gusto had established a huge following in its relatively short lifespan, raking in awards for best new business and livening the island’s culinary scene with its deliciously authentic fare. And with one executive decision, it was all over. “After all this work we did, this was 26

the end of it,” said Giancarlo. “This was our little jewel. We chose to retire to live on this island, make a business and everything was just gone.” The couple retreated to Florida to figure out their next move, and it wasn’t long before that loyal crowd they had cultivated started getting hungry again. “People were calling us, emailing us… ‘Why did you close? When are you going to reopen?’ We felt encouraged by our customers,” said Giancarlo. “There was some debate (between us) because we were on the beach at Siesta Key swimming and boating. We weren’t suffering. But we didn’t like leaving the job unfinished. We were cut out all our lives to be in this business.” Working with a broker, the couple made their way back to Hilton Head Island with a mind to revive Gusto for their hungry fans. A few different locations presented themselves, but it wasn’t until they found the site where Another Broken Egg had recently vacated that they knew they had their spot. “It seems like it was hand-made for us,” said Giancarlo. “It has a great kitchen, outdoor space and it’s in a great location.” “Everything really feels very meant to be,” said Nancy. Splitting painting duties (he goes high, she goes low), the couple spearheaded a near-gutting to the existing structure to create an ambience of authentic Italy. “We

found the basic shell was very well done,” said Giancarlo. “We gave it a rustic feeling like something from my homeland. We put brick walls inside with metal accents, we put the full wood beam to create this old Roman trattoria style… and it’s all hand painted by me and Nancy to give it that Tuscan touch.” This new Gusto essentially transplants the full experience that made the original restaurant such a hit, including key staff members like master chef Rosario Limonio and house manager Antonio Galati. “Rosario is from Napoli, so he adds some touch of Southern flavor in the kitchen,” said Giancarlo. “Antonio is from Sicily. He’s a good cook but he doesn’t want to cook. People love him.” It’s worth noting that the word “Gusto” defines a sense of enthusiasm in Italian. If there’s one thing that can be said about Gusto, it’s that they definitely foster enthusiasm. “There was this overwhelming support we really appreciated,” said Giancarlo. “It was not an easy step to let go of a good business. We are happy to be back in this community.”

Twelve years ago, they were the hottest new culinary trend sweeping the nation. Six years ago, they had been written off as a fad. Today, food trucks have become more than just a trend or a fad. They are a vital part of the culinary offerings in towns across the country, even in small-town Bluffton. You’ll see them all over town: Chef B’s Eatz with its vibrant urban paint scheme and delectable Lowcountry fare. ‘Murican Border with its distinctive monochromatic truck dispensing mouth-watering tacos. Even high society has gotten in on the act, with Big Carol’s Food Truck serving up gourmet fare to the sophisticated folks at Palmetto Bluff. Even the brick-and-mortar restaurant industry, once mortal enemies to their more mobile cousins, have gotten in on the act. And as people clamor for more variety in outdoor dining, whole cottage industries have sprung up around the simple idea of parking a kitchen in the middle of a party. Take a look inside the distinctive tealand-black Pizza Co. truck, with its wide pizza oven dangling off the back, and you’ll find Marshall Sampson, co-owner of both Pizza Co. and Santa Fe Café. Having one foot firmly in fine dining and one in food trucks has given Sampson a unique perspective on their growing profile over the bridge. In fact, when Pizza Co. expanded, adding the new Burnt Church Distilleryadjacent shop to its flagship Main Street 28

Hilton Head store, it was the truck that led the way. “When we got into Main Street and started looking at it, we started thinking we wanted to get our foot in Bluffton (before opening full time),” said Sampson. “Once we saw how this model works on the island, I thought, ‘I can definitely make this portable.’” It came at just the right time. With the shutdowns and uncertainty that plagued 2020, a little bit of comfort food right on your doorstep was just what the doctor ordered. And with Pizza Co.’s food truck offering the exact same 90-second perfection as its brick-and-mortar counterpart, people ate it up. “Right when the pandemic started, I started calling all the HOAs to set up in different neighborhoods. People were afraid of going out, so I’d just come to them,” said Sampson. “That became our business model – we did that the whole last year.” And don’t think that with a smaller footprint comes a smaller workload. “It’s definitely more involved,” said Sampson, noting that a food truck requires extra steps in cleaning, preparing, loading and unloading. “And then you’re in food truck with an 800-degree oven when it’s 110 outside,” he said with a laugh. “You lose the pounds pretty quick.” Even with restrictions lifted and more people venturing back out into their favorite restaurants, the novel concept of outdoor dining wherever you feel like it has caught on. You’ll find numerous examples,

like Savannah’s eccentric Starland Yard, where a dizzying array of food trucks dot the calendar. Closer to home, Lot 9 Brewing Co. has made their daily rotation of food trucks a major part of the appeal, assuring that no two visits are the same. The latest food truck park can be found just on the outskirts of Old Town Bluffton on May River Road. Called “Backyard State of Mind,” this self-described hangout offers a space where food trucks could have a reliable spot to build a crowd of regulars. “It’s a little bit free-flowing,” said David Meeder, who founded Backyard State of Mind with his wife Shelley. “Something inclusive, diverse and safe. The deal is, you want to break down the barriers for why people say now. It’s just easy to come in, grab what you want and either hang out for a while or take it to go.” Plans at Backyard State of Mind will eventually include a beer garden and live entertainment, but for the time being it’s providing a regular home for food trucks and a place where patrons can try out everything from Thai food and slowsmoked BBQ to ice cream and coffee. “Ultimately what we want here is variety,” said Meeder. Don’t we all? Once dismissed as a fad, they’ve proven their staying power. Once maligned by restaurants, they’re now being embraced by savvy restaurateurs. Food trucks have opened up new avenues for hungry diners, and have become an integral part of our culinary experience.

As “eat local” has evolved from a tenet of niche restaurants to a vital part of the dining experience, the number of local purveyors has grown exponentially. Especially around here. The Lowcountry is a region rich with resources. Its waters teem with seafood of every stripe, and in its soil you’ll find some of the finest farming on earth. To think – some of the tastiest dishes in the Lowcountry just wouldn’t be the same if Rita Godfrey had decided to build a she-shed. “It’s not just a living, it’s my therapy,” she said, of the lush microgreens she grows in the outbuilding on her Ridgeland farm that was almost a she-shed. “We grow quite a few microgreens in here. It used to be sunflower and pea shoots, but some of the chefs that are more into different things like beets and wasabi and nasturtium.” Godfrey began Penny Acre, her microgreens farm which supplies restaurants and farmers markets around the Lowcountry, after seeing a lack of the nutritious little sprouts around town. “One day I thought, ‘I love to garden, and I have tons of flowers. Why can’t I grow microgreens?’ So I did an online course,” she said, “We threw away quite a bit of microgreens at first. They’re very meticulous little plants. They like the heat, humidity, and temperature exactly right… You can’t just put them in a tray and expect them to grow.” Having perfected the art, you can find Penny Acre microgreens across the Lowcountry and at pennyacremicrogreens.com.

That may seem like a lot, but for Reaves it’s not the quantity, it’s the quality. “We’re still family owned and operated, so the chefs that we deal with really want to know the fisherman. They want to know their source,” he said. “It’s from our boats to your table. We’re not trying to hit every restaurant on every corner.” “Craig has a big heart and runs a very good business,” said Margaret Pearman, owner of Charlie’s L’etoile Verte. “We always have shrimp from him. If we ever do oysters on the half shell, we get them from him. And the bulk of our local fish, clams, flounder... He’s got it all.”

River Root Farms Sprout Momma Breads

Odds are good that even if, somehow, you haven’t heard of Sprout Momma Breads, you’ve tasted it. What began as a tiny inhouse venture started by Kim Tavino and her son Ryan Fennessey has since morphed into the de facto bakery for most of the restaurants on the island. “It was a long process,” said Tavino. “I started making breads as gifts for clients, and then went to farmers markets where I was honestly shocked to see people buying my bread. It was so cool to see them with a loaf under their arm.” The popularity of Sprout Momma’s offerings stems partially from what truly sets them apart – sprouted wheat flour, which not only lends each item a delightful fluffiness, it’s also better for you. In typical wheat flour, the protective outer coating around the wheat berry gets crushed into the flour, which can be harder to digest. “When you sprout, you soak wheat berries for 3-4 days until they sprout a root,” said Tavino. “It makes it easier for your body to assimilate the proteins and minerals, and it’s easier to digest.” And it’s a far sight tastier, too, as anyone who has tried Sprout Momma Breads will attest. If you want to try it for yourself, just head to your favorite restaurant. Odds are good it’s already on the menu. “They do an excellent job,” said Leslie Stewart of Sunrise Café “We have a bread they created and it’s the bread for our avocado toast. We feel like it’s a healthier option for our avocado toast.” Stewart is also a customer at their bakery. “They have by far the best sandwiches in the world.”

Sea Eagle Market

Craig Reaves was just a kid when he got his start in the seafood business. His dad and uncle had founded Reaves Bros. seafood in Holden Beach, N.C. in the 1970s and the younger Reaves was eager to join them as soon as possible. “When I was a teenager, my dad helped me get my first boat,” said Reaves. “It was called the Boy Shrimper. Pretty fitting name for 16-year-old.” He made his way down the coast to Beaufort in 1992 and immediately began building Sea Eagle Market, a purveyor and wholesaler of local fish and seafood from up and down the east coast. It didn’t happen overnight, but over time as his operation grew to encompass fresh shrimp, fish, oysters and clams, Reaves

The relationship between chef and supplier is built on mutual respect and admiration for each others’ respective arts. Few people can see both sides of that relationship like Matt Valentino, who started growing microgreens while he was a chef at The Pearl. “I decided I’d grow my own for the restaurant and it became kind of a hobby,” he said. One chef friend reaching out for microgreens was all it took to launch this hobby into a business. “I got him some samples, he liked them, and then I just rolled and started dropping off samples with other chefs in the area.” What Valentino brings to the table is a unique perspective on the way microgreens can transform a dish. “I do custom mixes – that’s something really creative where chefs can pick and choose,” he said. “Think of a fall seasonal dish – I’ll mix root vegetables, parsnip, celery and carrots. I’ll do a custom mix that is attributable to that dish or a mirepoix for soups and sauces.” He’s also enhancing the art of craft cocktails with edible flowers. “It used to be put you’d put a floating lemon slice and that was fancy. Now we do a floating cucumber flower.” And the results are delicious. “We use a radish sprout on our avocado toast because it gives it a little bit of a horseradish, peppery taste,” said Sunrise Café owner Leslie Stewart. “They’re always super fresh and it’s a great way to support a local business.”

Delisheeyo

While some producers grow for a multitude of restaurants, some restaurants grow a multitude of produce for themselves. All around the modest footprint of Delisheeyo, you’ll find a smorgasbord of edible plant life carefully cultivated by Brent Wearren for use in his son Blake’s south end eatery. “On average, we have 70 different varieties of edible plants – the lemon and lime out front, that’s where the garden started,” said Blake. “We have a guava tree, papaya, olive tree, avocado, tangerine, loquat, goji berries… You can pretty much grow anything here with the right amount of care. The papaya tree grew out of the compost pile. Those aren’t supposed to grow here.” There must be something in the soil, because the foliage surrounding this vegan- and vegetarian-friendly restaurant is downright abundant. “The kale is pretty prolific – probably half of our kale in the winter comes from the garden. Same with salad greens,” said Blake.

Ingredients 1 pound ½ cup ½ tablespoon 1 teaspoon ½ teaspoon ¼ teaspoon 1 tablespoon 8 each

White firm fish (Mahi, grouper, snapper) Cornmeal Chili powder Cumin Salt Black pepper, ground Avocado oil Corn tortillas

Street Corn Salad: 3 each Ears of corn 1/2 cup Tomatoes, diced 1/4 cup Red onion, diced 2 tablespoons Cilantro, chopped 1/4 teaspoon Salt 1/4 teaspoon Black pepper, ground 1 each Lime, juiced 1/2 tablespoon Chili powder 2 tablespoons Feta cheese, crumbled 1 each Jalapeno, minced, seeded

Method: • Pat the fish dry with a paper towel; cut the fish crosswise into 1-inch-wide strips. • On a plate or shallow bowl, season the cornmeal with chili powder, cumin, salt, and pepper. • Gently press the fish in the cornmeal, coating all sides. • Preheat sauté pan to medium-high heat. • Add avocado oil, allow to warm about 10 seconds. • Add the fish and cook, turning once, until the crust is golden brown, and the fish is cooked through, 2-4 minutes per side. • While the fish is cooking warm the tortillas. Place tortillas on a plate, cover with a damp paper towel and microwave for 45 seconds. • To prepare the Street Corn Salad: Preheat grill. (If you don’t want to fire up your grill, sauté the corn in a sauté pan on medium-high heat with no added oil. Sauté until lightly charred.) • Mark ears of corn on grill, just until slightly charred, about 3-4 minutes, rotating occasionally. • Remove corn from the grill. Once corn is cooler to the touch, shuck corn kernels. • In a bowl combine; corn, tomatoes, red onion, cilantro, salt, pepper, lime juice, chili powder, feta, and jalapeno. Serve the street corn salad warm or cold. • Once all of the fish is cooked, build your dream tacos! As a listener, it oftentimes feels like the connotation, or even the general feel, of music can be almost as important as the actual sound. Different genres can easily be associated with different types of atmospheres. When I think of reggae music, a carefree, easygoing setting comes to mind, with sunshine and smiles and positive vibrations for all. Such was exactly the case when I stumbled across a Soundboy show. Hilton Head’s newest reggae rock band was playing at the Tiki Hut, a venue known for its electric energy of music and crowds traversing around the outside bar along the Coligny beach. It was a perfect setting for viewing a band with such easygoing vibes and rocking talent. Originated in Jamaica in the late 1960s, reggae music evolved from the earlier genres of ska and rocksteady. Instantly recognizable from the counterpoint between the bass and drum downbeat and the offbeat rhythm section, reggae usually relates news, social gossip, and political commentary. Reggae is deeply linked to Rastafari, an Afrocentric religion which developed in Jamaica in the 1930s, aiming at promoting Pan Africanism. Soon after the Rastafarian movement appeared, the international popularity of reggae music became associated with and increased the visibility of Rastafari, spreading its gospel throughout the world. Stylistically, reggae incorporates musical elements of rhythm and blues, jazz, mento, calypso, additionally drawing influence from traditional African folk rhythms. One of the most easily recognizable elements is offbeat rhythms; staccato chords played by a guitar or piano on the offbeats of the measure. The tempo of reggae is usually slower paced, often incorporating the concept of call and response throughout the verses and choruses. The genre of reggae music is led by the 54

drum and bass which ultimately helps you not only listen but truly feel the vibes it gives off. Soundboy, thankfully, found the gap in the market here in Hilton Head. We were desperate for a fresh new sound to enchant us during the outpour of new faces, and old, that frequent our happening restaurants and bars. With Kyle Wareham on guitar and vocals, Martin Lesch on keys, Jos Vicars on bass, John Wilkins on lead guitar and Matt Robbins on the drums we have well established musicians coming together to give us the reggae rock show of a lifetime. Each of them has a background in solo or group performance around the area. In 2018, after the disbanding of a previous local band Storks, the idea for Soundboy was born. Kyle Wareham sent out a facebook post asking for new members to join a new reggae rock band and the rest was history. And, if you’re wondering about the name origination like I was, Soundboy is a patwa word, Jamaican for amateur dj, or a bunch of white guys trying to play reggae, which, if you ask, me is a perfect name for this band. Seeing Soundboy live is like getting a mix of modern American reggae rock but, also being able to incorporate jam band. They took their inspiration from bands like Soja, Rebelution, and Iration and ran with it. If you are looking for an original show with a new fresh take every time you see them then, this is the band for you. And lucky enough, you can see them every other Sunday at the Tiki Bar on Hilton Head Island from 1 p.m. to 5 p.m. this summer. Word on the street is we might even be lucky enough to get some original material this year as well. Don’t miss out on one of their shows because we are seeing legends in the making!


HILTON HEAD JAZZ CAMP After a year hiatus, the 10th Annual Hilton Head Jazz Camp is back with daily, in-person instruction at Hilton Head Christian Academy’s brand-new 28-acre, 65,000 square-foot campus in Bluffton, July 12-17. Sponsored by the non-profit Junior Jazz Foundation, this premier summer jazz camp has hosted students from around the country and is open to aspiring intermediate and advanced music students ages 14-20. The comprehensive program offers immersive study in improvisation, theory, combos, Master Classes, Big Band and elective courses under the guidance of 18 professional faculty members and guest artists which culminates in a finale performance on July 17th at 2 p.m. Tuition includes daily chef-catered lunches and all daytime activities, faculty recital, special mid-week lunch Master Class and two complimentary tickets to the finale. Supervised overnight accommodations are available for an additional fee. Over the years, the program has expanded and now includes the new afternoon Hilton Head Jazz Clinic for beginning instrumentalists ages 10-14 from June 21-25 with a final concert on the last day of the clinic, plus a special full-day music trip to neighboring Savannah, Georgia on June 23. For high school guitarists with two or more years of experience who really want to dig into jazz and improvisation, the Hilton Head Jazz Guitar Institute also takes place from June 21-25. This course is highly recommended for any guitarists who are planning on being a part of the Hilton Head Jazz Camp. Since 2005, The Sandbox, An Interactive Children’s Museum, on Pope Avenue has been the premier destination for hands-on play and learning for young children and their caregivers with interactive exhibits, family-focused activities, summer camps, special events, Sensory Days for those on the autism spectrum, virtual school and school readiness programs, as well as community outreach. In 2019, a 3,500-sqare-foot satellite location opened at the Tanger 2 Outlets in Bluffton. This spring, the Museum moved down the street to a brand-new, larger LEED Gold-certified building in Lowcountry Celebration Park. A 10-acre site close to Coligny Beach, Hilton Head’s newest park features various attractions to engage both visitors and locals, including a stage, pavilion and expansive lawn for festivals, walking trails, exercise stations, restrooms, WiFi and recharging stations, the Adventure Playground – a reimagined version of the ship Captain William Hilton was aboard when he spotted the Island in 1663 – and The Sandbox. According to Executive Director Nancy E. Fish, some of The Sandbox’s most beloved interactive exhibits will make the move with enhancements while new ones will be introduced. For instance, the Pirate Ship has transformed into a Shrimp Boat and Gulfstream is donating a new jet cockpit to replace the one at 56

the previous location. A new Gullah exhibit will introduce children to this unique sea island culture; The Sandcastle will house a Shadow Room, a castle-themed dress-up area and slide; a larger interactive LEGO wall will be available; and, eventually, an experience called the 3D Holographic Sandbox will be unveiled. These exhibits offer “the same types of components in STEAM [Science, Technology, Engineering, Arts and Mathematics] and creative play, but upgraded because we are expanding our reach to children through age 12,” notes Fish, who has a background in Montessori learning and a Master’s in Education. She is especially excited about the Museum’s new dedicated outdoor exhibit space which will ultimately house a kayak simulator, rock wall, outdoor music wall and Pool Noodle Forest. In addition to providing a place where children and their caregivers are encouraged to learn together through play, both the Hilton Head Island and Bluffton Sandbox locations offer special summer programs, such as Imagination Hour, Kid’s Night Out and Summer Camps. Geared to ages five and under, Imagination Hour is a weekly story time followed by a related family


arts and crafts project. Kid’s Night Out is a chance for children ages 4-12 to spend a playful evening at the Museum with special supervised activities and a pizza dinner while their adults can enjoy a few hours to themselves or out on the town. Summer Camp starts on June 14 with eight weeks of specially designed half-day and full-day programs for ages 4-12 at both sites. Weekly themes vary from “Life in the Lowcountry,” “Space Exploration” and “Water, Water Everywhere” to “Sun and Sand,” “Chemistry Camp” and “Art for Everyone” depending on the location, but all offer integrative, hands-on learning with STEAM activities, as well as daily staff-supervised play in the Museum’s exhibits. Healthy snacks will be offered to all children and full-day campers should bring a lunch. Both the popular Kid’s Night Out and Summer Camps require pre-registration. The Museum’s new location has been years in the making. The Sandbox began a Capital Campaign in 2016 which was then shelved due to Hurricane Matthew. Fundraising restarted in 2018, before COVID-19 turned the world upside down. The Town of Hilton Head Island provided the new building in Lowcountry Celebration Park, as part of the Coligny Redevelopment Project, while The Sandbox raised money for the new and updated exhibits, as well as expanded programming. Current protocols require cleaning everything in the Museum after each two-hour session and online reservations are recommended to guarantee admission due to capacity restrictions, although walk-ins are accepted if space is available. If restrictions ease over the summer, capacity and the number of daily sessions may increase with additional programs, such as Sensory Saturdays, and special events like the Fourth of July party added back to the schedule. For Fish, exciting elements of the move include the new and upgraded hands-on exhibits, as well as the opportunity to expand programming, especially for the local community. “Last fall, we did a Museum school – a virtual program for Beaufort County students that was a HUGE success,” she notes. “Those kids didn’t want to leave The Sandbox! So, I think programming that is designed for local communities, that they can utilize, is going to benefit the children is our area. That’s what I’d really like to focus on, and programming for the times when we’re not in season.” “I think kids now, more than ever, need play – that kind of free play, imaginative play. I think it’s a really important resource for them to have. And I want to make sure that all the children in the community can take advantage of it.
