Consommé Julienne with Wild Rice and Tomatoes

A consommé is a clear broth usually served with assorted vegetables. We added wild rice to ours for great flavor and texture.

Ingredients

  • 2 L (8 cups) LUDA H Beef soup base, prepared
  • 60 mL (4 tbsp) Vegetable oil
  • 230 g (8 oz) Parsnip, peeled and cut in julienne
  • 230 g (8 oz) Carrots, peeled and cut in julienne
  • 1 Onion, julienne
  • 2 Tomatoes, peeled and cut in julienne
  • 150 mL (2/3 cup) Wild rice, cooked
  • 15 g (1/2 oz) Parsley, finely chopped
  • Salt and pepper, to taste

Preparation

  1. Prepare the beef soup base according to the package directions, and keep warm.
  2. Heat oil and sauté parsnips, carrots and onion until tender.
  3. Add the tomatoes and heat gently, season to taste.
  4. Heat wild rice and add to the vegetables.
  5. Divide the vegetables equally among ten bowl and pour in hot beef soup base. Garnish with parsley and serve.

Shred up leftover chicken and add it to the consommé.
