Ingredients:
  • 8 oz. Oysters
  • 2 cup Buttermilk
  • For the cajun aioli
  • 1 cup Mayonaise
  • 1/3 cup Whole grain dijon mustard
  • 2 tsp. Apple cider vinaiger
  • 2 tbsp. Sweet relish
  • 1 tsp. Fresh tarragon or chervil
  • 2 tsp. Fresh parsley
  • 1 tsp. Paprika
  • 1/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 tsp. Cayenne
  • 12 tsp. Hot sauce
  • For the oyster breading
  • 1 cup AP flour
  • 1 cup Fine cornmeal
  • 1 tbsp. Cajun seasoning
  • 1/2 tbsp. Salt
  • 1/2 tbsp. Pepper
  • For frying
  • 3 qt Neutral oil
  • - -
  • 1/4 ea. Lemon juice
  • 1 head Butter lettuce for sliders
  • 12 ct. Rolls for the oyster sliders

In a medium bowl, mix all ingredients for the aioli and chill until ready for use.

Preheat oil to 375°F/190°C in a fryer or deep saucepan. Strain the oysters if using pre-shucked, and place in a medium bowl with the buttermilk.

In another medium bowl, mix all the dry breading items. Strain the oysters out of the buttermilk and toss in the breading. Shake all excess breading off.

Fry the oysters in batches until golden brown, 1-2 minutes. Drain on paper toss and toss with more lemon juice, cajun seasoning or salt.

Build the sliders or dip oysters in the sauce. Enjoy immediately!
