A few weeks ago the water aerobics class I attend had a luncheon and everyone who attended brought a dish to share. These women are fabulous cooks and tell the funniest stories. We laughed for hours and enjoyed delicious salads, fruit and desserts.

My contribution was homemade tomato soup garnished with ranch parmesan romano mini saltines. The crackers go great with soup or stews and can also be eaten alone as a crunchy appetizer. They take about 5 minutes to prepare.

Ranch Parmesan Romano Mini Saltines

1/2 (1 ounce) packet powdered ranch salad dressing mix
1 teaspoon paprika
1/8 cup grated Parmesan Romano cheese powder
¼ cup canola oil
11 ounce box mini saltines

In a large bowl mix together the ranch dressing mix, paprika, and cheese. Add oil. Stir. Add crackers and stir to coat all the crackers with the seasoning mixture. Leave crackers in the bowl for a couple of hours to dry before storing in zip top bags. (So the seasonings won’t stick to the bag.) Enjoy!
