Ingredients

  • 1 cup dry pinto beans or two 15-ounce cans pre-cooked beans
  • 2 yellow onions thinly sliced
  • 6 garlic cloves minced or grated
  • 1 tablespoon smoked paprika
  • 1 tablespoon avocado oil or any oil
  • 1 tablespoon blackstrap molasses
  • 1 teaspoon cumin seeds or 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups freshly diced tomatoes roma or any kind
  • 1 cup BBQ sauce

Instructions

  • If using dried beans, soak the beans in water overnight or at least 8 hours. Drain the beans then cover with cold water in a large pot over high heat. Bring to a boil, cover, then reduce the heat to a simmer. Simmer the beans for 1 hour or until fork tender. Drain, then set aside. If using canned beans, move on to next step.
  • Preheat oven to 350°F. In a large pan or dutch oven, add the beans, onion, garlic, paprika, oil, molasses, cumin, salt, garlic powder, onion powder, tomatoes and BBQ sauce. Stir well to combine.
  • Bake for 40 minutes or until all is thickened and creamy. Let cool for 10 minutes before serving. Enjoy!
