Leftover Lamb Hash Recipe

Today’s lunch is bought to you by the left overs in my fridge! I had cooked potatoes, green beans, shoulder of lamb and finger chilli 🌶 so I settled on making a lamb hash 👩🏻‍🍳👩🏻‍🍳🥰🌶 it was the loveliest brunch, not least because it consisted entirely of leftovers and took no time to make.
Method:
Use up whatever cooked meat and potatoes you have in your fridge.
1 onion, peeled and sliced
3 gloves of garlic peeled and sliced
Handful of green beans sliced
2 finger chilli 🌶
Olive oil
Salt to taste
3 large free range eggs
Add the oil to a big sauté pan. For this one I used my large @circulonuk sauté pan.
Add the onions, chilli and garlic and fry off for a few minutes. Next, add the beans and the meat. Fry off until warm. Then add in the potatoes. Stick the lid on and turn the heat up. Give them a jiggle so they don’t stick. After a few minutes, remove the lid and season with salt and pepper. Fry until the potatoes are golden and crispy on the edges. Next make a few wells in the has and crack eggs into them. Replace the lid and turn the heat down to a simmer. Cook until the white has cooked through.
