Poached eggs with avocado is a dish that combines the richness of avocado and the delicate texture of poached eggs. This combination creates a visually appealing plate and offers numerous health benefits. Avocado is packed with essential nutrients, healthy fats, and fiber, while poached eggs provide a good source of protein. Additionally, this dish can be customized with various seasonings and accompaniments, making it suitable for different tastes and preferences.

To be honest, I never liked making poached eggs. I never wanted to try because I was sure this wouldn’t be easy. The truth is, it is not difficult at all 😉. After researching different ways to make it, I found that the best way is to add vinegar, bring it to a boil, and strain the egg before adding it to the water to cook. But, more about this later.

Why Is Poached Egg with Sliced Avocado Good Choice for Breakfast

In my post Benefits of Breakfast, I explained why having breakfast is a good idea. But this doesn’t mean you can have donuts and feel no guilt 🫤. It is quite the opposite. The most important thing is to pick the proper breakfast, and poached eggs with avocado are an excellent simple breakfast choice. You’ll need breakfast to fuel your brain and provide enough energy until lunchtime.

If you wonder what eggs have to do with brain health, I’ll tell you that, besides much-needed protein, eggs contain several essential nutrients that support brain health. One of them is choline, which provides the brain cells with the necessary fuel to communicate with each other. This will lead to better memory and mental function. The other nutrients are vitamins B6 and B12 and folic acid, all necessary for brain health and development. 

Avocado is known for its high content of monounsaturated fats, which are heart-healthy and can help lower bad cholesterol levels. It is also a great source of vitamins C, E, K, and B-6, folate, and potassium. These nutrients contribute to a healthy immune system, improved digestion, and reduced risk of chronic diseases.

Poached eggs dish can be enjoyed in various ways, allowing you to personalize it according to your preferences. For instance, you can sprinkle chili flakes for a spicy kick or drizzle some lemon juice or even lime juice for a tangy flavor. Additionally, poached eggs with avocado can be served on toast, in a salad, or as a sandwich filling. This adaptability makes it suitable for breakfast, brunch, or even a light dinner.

I served this poached egg on bread over sliced avocado and cream cheese. So, in addition to the healthy nutrients for the brain, it offers an excellent source of healthy carbs from bread and healthy fats from avocado. Ingredients for Poached Eggs with Avocado

These are the ingredients you will need:

  • 2 large eggs
  • 2 cups water
  • 1 tbsp vinegar
  • 1-2 slices of bread – white bread, whole wheat bread, or sourdough bread. You can use fresh bread or crunchy toast; it’s your choice.
  • 1/4 cup creame cheese – you can also use ricotta cheese for a milder taste
  • 1/2 ripe avocado
  • Sea salt and black pepper to taste
  • Optional toppings: cherry tomatoes, chopped fresh herbs (such as parsley or chives), hot sauce, or crumbled feta cheese

Step-by-step Cooking Instructions

  1. Fill a medium saucepan with water, and add vinegar.
  2. Place the pot on the stove over medium heat and bring the water to a gentle simmer. You should see tiny bubbles forming at the bottom of the pot.
  3. Carefully break one egg into a fine-mesh strainer, allowing the thin, watery part of the egg white to pass through the mesh while keeping the egg yolk and thicker egg white in the strainer. Swirl the egg around in the strainer. Do the same with the second egg. 
  4. Carefully slide the eggs from the strainer into the gently simmering water (you can dip the strainer with the egg into the water, gently release the egg, and take the strainer out). 
  5. Let the eggs poach in the simmering water for about 3-4 minutes, or until the egg whites are fully set, and the yolk is still slightly runny. You can adjust the cooking time based on your preference for yolk consistency.
  6. Use a slotted spoon to lift the poached egg out of the water carefully.
  7. Place the poached egg in a bowl filled with cold water to stop the cooking process. 
  8. Cut the avocado in half and remove the pit. Carefully make lengthwise slices into the avocado flesh with the knife while still inside the skin. Once you’ve sliced the avocado, take a spoon and gently scoop out the avocado flesh by sliding the spoon between the scored flesh and the skin. 
  9. Spread cream cheese evenly over whole-grain bread and add avocado slices.
  10. Place the poached eggs on top of the avocado slices. 
  11. You can season with additional salt and pepper if you’d like and add any optional toppings. Some nice additions include a little bit of red pepper flakes, cayenne pepper, garlic powder, and fresh parsley.
  12. Serve immediately, and enjoy your delicious poached eggs with avocado!

Note 1: Using a mesh strainer for poaching eggs can give you precise control over the texture and appearance of the final result. Be patient and gentle during the process to ensure your poached eggs turn out perfectly. 

Note 2: Instead of avocado slices, you can use smashed avocado. Scoop out the flesh and mash it with a fork in a small bowl—season with salt and pepper to taste.

Why Use Vinegar for Poaching Eggs

As a biochemist, I appreciate how much biochemistry is in everyday life, especially in cooking. The main ingredient of vinegar is acetic acid, which helps the protein in egg white to coagulate and stay consistent around the yolk instead of spreading out. So, having vinegar in the water will help end up with a tight poached ball.
