Chef Salad Skewers is my recipe of the day with the blogging group From Our Dinner Table. We group together weekly to post on a common recipe topic. This week we are sharing recipes for Mother’s Day brunches.Chef Salad Skewers

Since brunch buffets generally include both breakfast and luncheon foods, I thought I would add something perfect for a small lunch sampling. You can use it as an add on bite, as many buffet foods do, or as an appetizer.

I imagine most salad courses for this day would be small. Personally, I would love this along with some crepes, breakfast pastry and fresh cut fruits. And maybe a dessert with a Bloody Mary or Mimosa.

Equipment

  • 8 bamboo skewers (7-inch)

Ingredients
  

  • 1/2 cup salad dressing Thousand Island or your choice
  • 2 hard-cooked eggs
  • 1/2 small head iceberg lettuce
  • 8 marinated pitted olives
  • 4 ounces cheddar cheese cut into 8 cubes
  • 4 ounces smoked turkey cut into 8 cubes
  • 4 ounces smoked ham cut into 8 cubes
  • 16 cherry tomatoes

Instructions
 

  • Cut lettuce into chunks or squares and place on skewers, alternating between ingredients.
  • Each skewer should have lettuce, 1/4 of an egg cut into wedges, one olive, one each of the cheese, ham and turkey and two cherry tomatoes.
  • Serve with salad dressing either in a larger bowl or individual servings.
