Chicken Provençal, or "Poulet Provençal" as the locals call it, boasts a robust yet delicate flavor profile. Easily substitute the chicken with mushrooms, extra firm tofu, or your favorite vegan “chicken” cutlets, and still revel in the magnificence of this dish.

Ingredients

  • 2 lbs chicken thighs and or drumsticks, bone-in

  • 1 Tbsp Piquant Post Herbs de Provence

  • 1 tsp salt, plus more to taste

  • ½ tsp pepper

  • 2 Tbsp extra virgin olive oil

  • 8-10 garlic cloves, peeled and left whole

  • 1 ½ cups fresh whole tomatoes, cherry, grape or small variety tomatoes

  • 1 cup pitted olives, kalamata or green olives

  •  3 shallots, cut in half lengthwise

  • ½ cup dry white wine (sauvignon blanc works well)

  • To serve: cooked pasta, cooked rice or steamed green beans 

Notes

Be sure to scrape up the brown bits from the bottom of the pan after pouring in the wine. These brown bits called “fond” release amazing flavor into the dish.

Instructions

Preheat the oven to 400 deg F. Season both sides of chicken generously with Piquant Post Herbs de Provence, salt, and pepper. Heat a heavy bottomed, oven-safe pot over Med-High heat and pour in oil. Once hot, place the chicken into the pot and sear on each side until golden brown; about 3-5 mins per side. Work in batches so that you don’t overcrowd the pan. Turn off heat when finished. 

Add in garlic, tomatoes, olives and shallots around the chicken. Pour in wine and season with another teaspoon of salt (or less to taste) then stir to mix well. If pot isn’t oven-safe then transfer browned chicken to an oven-safe baking dish and proceed with the next steps.

Cover pot with a lid or the baking dish with aluminum foil and bake for 45 minutes to 1 hour or until the chicken is fully cooked (to 165 degrees F on a thermometer when fully cooked). 

Plate the chicken and olives alongside steamed green beans, rice or pasta. Spoon a small amount of pan liquid over chicken. 

Alternatives & Substitutions

  • Though simple, Chicken Provençal is a savory and tasty dish. The fresh flavors and ingredients really speak to the essence of Southern French cuisine. Feel free to add more aromatics like fresh thyme, lemon slices and even potatoes for a heartier dish. 

  • For this recipe, dark meat chicken works best like chicken thighs, legs or wings. Make sure that they are bone-in and even skin-on for the most flavor and juiciness. 

  • You can make this recipe plant-based by substituting the chicken for extra firm tofu, portobello mushrooms or vegan “chicken” cutlets – just be sure to follow the cooking instructions on the package.
