Simple Mixed Greens Salad (GF,DF,V)

Mixed greens salad with cucumber onion and sunflower seeds.

This simple salad is so easy to make and it goes with so many different meals!

This is hands down one of my favorite go to salads. You can make it in 10-15 minutes and it’s simply delicious. It’s the perfect partner to some grilled chicken or steak or as a side for your favorite egg bake at brunch.

What You’ll Need:

  • olive oil
  • apple cider vinegar
  • Dijon mustard
  • maple syrup
  • sea salt
  • ground black pepper
  • Mixed Greens
  • sunflower seeds
  • red onion
  • cucumber

Making the Recipe:

You’ll start by mixing together the dressing. Put all of the ingredients in a small glass bowl or measuring cup and whisk.

Next, thinly slice the onion and cut the cucumber into small bite sized pieces.

You can assemble the salad in a big serving bowl or make individual bowls and let each person decide what they want to include on their portion. Some people don’t love raw onion. You can serve that tableside and let those who do like it add to their salad.

Feel free to omit ingredients or add others. Cherry tomatoes are also delicious on this this salad!

You can make this a hearty main dish or lunch, by adding some chicken, shrimp or tofu to it. Serve it as a side dish your main dish for dinner or brunch. It is so versatile!

Ingredients

For the Dressing:

  • 3 Tbsp. olive oil, extra virgin
  • 3 Tbsp. apple cider vinegar
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. maple syrup (or honey, if not vegan)
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper

 

For the Salad:

  • 8 cups mixed greens
  • 1/4 cup sunflower seeds
  • 1/4 red onion, sliced thinly (optional)
  • 1 cucumber, thinly sliced (optional)

Instructions

  1. Put all of the ingredients for the dressing in a glass measuring cup or bowl and whisk.
  2. Place the mixed greens in a large mixing bowl or serving bowl.
  3. Slice the onion and cucumber, if including. Add them to the mixed greens in the bowl.
  4. Add the dressing and toss well. Top with the sunflower seeds and any other optional ingredients before serving.

Notes

  • Add halved cherry tomatoes for additional vegetables.
  • Add some diced bacon for additional flavor and texture.
  • Turn this into a main dish by adding chicken, shrimp or steak to the salad.
  • Add some toasted pecans instead of the sunflower seeds.
