How To Make Arnaud’s Trout Meuniere Recipe

A classic French dish that features trout fillets coated in seasoned flour and pan-fried in butter until crispy.

Ingredients

  • 4 trout fillets, skin-on
  • 1/2 cup all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp unsalted butter
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Rinse the trout fillets and pat dry with paper towels.

  2. In a shallow dish, mix together flour, paprika, garlic powder, onion powder, salt and pepper.

  3. Dredge each trout fillet in the flour mixture, shaking off excess.

  4. Heat butter in a large skillet over medium-high heat.

  5. Add the trout fillets, skin-side down, and cook for 4-5 minutes until golden brown and crispy.

  6. Gently flip the trout fillets and cook for another 2-3 minutes until cooked through.

  7. Squeeze fresh lemon juice over the trout fillets and sprinkle with chopped parsley.

  8. Serve immediately with your choice of roasted vegetables or rice.
