Ingredients

  • 1 cup dried apricots, chopped
  • 1 cup water
  • 1/2 cup white vinegar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon red chili flakes
  • Salt to taste

Instructions

  1. In a saucepan, combine dried apricots, water, vinegar, brown sugar, ginger, cinnamon, cloves, red chili flakes, and salt.

  2. Bring the mixture to a boil over medium heat, then reduce heat and simmer for 20-25 minutes until the apricots are soft and the mixture thickens.

  3. Remove from heat and let it cool completely.

  4. Transfer the chutney to a sterilized jar, cover tightly, and refrigerate for at least an hour before serving.

  5. Serve chilled with your favorite appetizers or as a condiment for cheese and crackers.
