How To Make Corned Beef Salad with Rye Croutons

Crisp lettuce, healthy rye croutons, and savory corned beef tossed in a creamy, Thousand Island Dressing, makes up this hearty corned beef salad!

Ingredients

  • 3cupsrye bread cubes,cut into ¼ inch cubes
  • tbspcooking oil
  • ¾tspsalt
  • ½tspfresh ground black pepper
  • ½cupmayonnaise
  • 2tbspketchup
  • dashworcestershire sauce
  • 1tbsppickle relish
  • 1egg,hard cooked
  • 3scallions
  • ¾lbgreen leaf lettuce,(1 head)
  • 1lbiceberg lettuce,(½ head)
  • ½lbcorned beef,sliced

Instructions

  1. Heat the oven to 350 degrees F. Put the bread cubes on a baking sheet and toss them with the oil and ¼ teaspoon each of the salt and pepper.

  2. Bake, stirring occasionally, for 5 to 10 minutes, until the croutons are crisp and starting to brown.

  3. In a small bowl, whisk together the mayonnaise, ketchup, Worcestershire sauce, ¼ teaspoon of the salt and the remaining ¼ teaspoon of pepper. Add the pickle relish, the egg, and the scallion bulbs and stir to combine.

  4. In a large bowl, toss together the lettuces, scallion tops and corned beef.

  5. Serve topped with the dressing and the croutons, and enjoy!
