How To Make Spiced Slow-Roast Duck & Apple Sauce

Ingredients
- 1 whole duck (about 4 pounds)
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons olive oil
- 2 apples, peeled, cored, and chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup apple juice
- 1 tablespoon honey
- Salt and pepper to taste
Instructions

Preheat the oven to 325°F (165°C).

In a small bowl, combine the salt, black pepper, paprika, thyme, and rosemary.

Pat the duck dry with paper towels and rub the spice mixture all over the duck, both inside and out.

Heat the olive oil in a large oven-safe skillet over medium-high heat.

Sear the duck on all sides until golden brown, about 5 minutes per side.

Remove the duck from the skillet and set aside.

In the same skillet, add the chopped apples, onion, and garlic. Sauté until the onions are translucent and the apples are slightly softened.

Add the apple juice and honey to the skillet, season with salt and pepper, and stir well.

Place the duck back in the skillet, breast side up, and transfer the skillet to the preheated oven.

Roast the duck for about 2 hours, basting every 30 minutes with the apple sauce.

Increase the oven temperature to 400°F (200°C) and continue roasting for another 30 minutes until the duck is crisp and the internal temperature reaches 165°F (74°C).

Remove the duck from the oven and let it rest for 10 minutes before carving.

Serve the spiced slow-roast duck with the apple sauce and enjoy!
