Cook along with food writer Georgina Hayden as she makes her no nonsense, mouth-watering Zucchini Trifolati for Kiwi comedian Ray O’Leary. As a special bonus for listeners of this episode, Ray also shares the recipe for his own hilarious dish, ‘Bean Korma’.


For the Zucchini Trifolati you will need (serves 4-6 as part of a meal):


750g packs of courgettes

4 tablespoons extra virgin olive oil

4 garlic cloves

½ teaspoon dried chilli flakes

1 jar white beans, around 500g-600g (alternatively you can use a can which usually weigh around 400g)

Sea salt and freshly ground black pepper

6 sprigs of mint, leaves picked
