Let me share my favourite recipe with you โค

Crayfish Curry / Chutney
Ingredients:

Cleaned crayfish
1 x Garlic glove cleaned
1/2 block of butter
Parsley
Italian herbs
Corriander
Curry leaves
8 Tamatoes
1 x Finely chopped onion
1 x green chilli
1 teaspoon of Jeera seeds
1 teaspoon of mustard seeds
2 x teaspoons of chilli powder
1 x teaspoon of tumeric powder
2 x Tablespoons of cooking oil.

Recipe :

When it comes to seafood,I love making my own garlic butter.I feel it really adds a much richer flavour but you can also buy the ready made garlic butter from your local supermarket.

In a bowl, crush your cleaned garlic, add half a block of melted butter. To this mixture add your parsley and italian herbs, mix all ingredients well.

In a frying pan add the garlic butter mixture.once the pan is nice and hot add your crayfish.Fry until the crayfish turns to a nice bright orange colour.Set aside.

Place tamatoes in an oven tray and place in oven to bake at 180 degrees for 30 minutes or until outer skin starts to slightly char.Once done place tamatoes into blender to get a nice thick mixture.Set mixture aside.

In a seperate pot add 2 tablespoons of cooking oil of your choice to cover the bottom of the pot,I usually cook with coconut oil.To the oil add your teaspoon of mustard and jeera seeds.Fry until you hear a popping sound .Add your finely chopped onion to the pot.Fry until onions turn into a translucent colour.

Add a teaspoon of tumeric powder to the pot, also add the teaspoon of chilli powder. To this mixture add your blended tamatoes and green chilli..Let this cook well and the spices infuse into the tamatoe mixture. Now add your garlic pan fried crayfish to this curry or chutney as we call it.Let it cook well and simmer for about 20 minutes.

Finally add your garnish of corriander and curry leaves to the dish for a lovey flavour and aroma.Your delicious Crayfish curry is now ready to be enjoyed with either basmati rice or bread.
