Fermented Shrimp Paste – (Mam Tom and Mam Ruoc)

A pungent, purple, pleasure, fermented shrimp paste adds a boost of umami to any dish.  It’s used in soups, sauces and even straight up.  The 2 different types of shrimp paste are made using different kinds of shrimp.  The Mam Ruoc uses krill, the tiniest shrimp.
