What is a Brisket?
Brisket is a cut of beef from the lower chest muscle or pectoral region of cattle. These muscles are packed with collagen-containing connective tissue which makes for a tough piece of meat that needs to be cooked low and slow. We’re talking hours to get it to perfection
Brisket can be smoked, roasted, braised, or even boiled. But however you cook it, when it’s cooked properly that collagen in the tissue gelatinizes and melts into the meat making the most tender beef you can imagine.
I love the American Wagyu beef brisket from Snake River Farms. You can get a fully-cooked smoked brisket or one you cook yourself. Both types arrive frozen.
The SRF smoked brisket is only available in one 8-lb size. The raw version is available from 12-22 pounds and in their Black or Gold label varieties.
The Black Label beef contains a Beef Marbling Score (yes, that’s a real thing) of 6-8 and the Gold Label has a BMS of 9+. More marbling means a more tender result. To give you an idea of the quality of Snake River Farms brisket – USDA prime rated meats usually max out at a BMS of 5.

Smoked Brisket Recipes
Marinade injections and spice rubs are the perfect way to season a brisket for smoking. I have tried several versions and variations over the years, and they have all turned out fantastic. I couldn’t pick just one Pit Boss brisket rub recipe as my favorite. And you can add all the seasoning you want, but the most important factor in smoking a brisket is to smoke low and slow.
