These breakfast eggs are fried in rendered bacon fat until the whites are lacey and just set; then served alongside cinnamon raisin toast, fruit salad, avocado and a spoonful of nut butter. This sounds like the perfect Friday morning breakfast.

ingredients

  • 2 slices of bacon
  • 2 eggs
  • 1 cup fruit salad
  • 1 slice of bread, toasted
  • 1/4 avocado, diced

Method

  • Step 1

    Add bacon to a skillet and heat over medium heat. Allow the fat to render and cook to desired level of doneness. Remove bacon from the pan and place on a paper towel while you cook the eggs.

  • Step 2

    To the rendered bacon fat, add two eggs and cook until the whites have fully set but the yolk is still runny. Remove from heat and plate with bacon, toasted bread, fruit salad of choice and diced avocado.
