Perfectly Broiled NY Strip Steaks!

There is nothing better than a grilled steak! Having said that, grilling isn’t always an option. If that is the case, I highly recommend broiling as an alternate method. I have been broiling our steaks during the winter months for many years and they turn out just as delicious! We like our steaks cooked to a perfect medium rare and after some trial and error, I was able to get the broiling time just right. Of course, if you don’t like your steak medium rare, you will need to adjust the cooking time. When I purchase our steaks, I have the butcher slice them an inch thick. If you are going to use this recipe, I suggest you do the same, as the cooking time will be different for any other thickness. This method will work the same for Ribeye steaks as well.

When I broil anything, I start by adding a layer of kosher salt to the bottom of my baking sheet. (I use a baking sheet with a wire rack. I prefer it over a broiler pan) This prevents having a house full of smoke and possibly, your neighbors calling the fire department! lol The salt helps absorb any grease that may pool and splatter onto the heating element. Let me just say, I would not skip this step!

For a perfect steak, you will want to remove it from the fridge and allow it to come up to room temperature. The food police have all sorts of guidelines in regards to this…Most say 30 minutes….I set mine out for anywhere from 45 minutes to 2 hours (which is outside of the recommended guidelines). However, I have never had an issue. The reason I do this is so the salt has a chance to tenderize the meat. The seasoned steaks should sit for at least 40 minutes before cooking. If you don’t have time to wait for them to come up to room temperature, you should season them just before cooking. Otherwise, they will most likely be tough. I season mine with a generous amount of salt and freshly ground black pepper. Make sure to season both sides. Then, cover with waxed paper and let rest as mentioned above.

When the steaks are ready to cook, adjust your oven rack to the 2nd postion under the broiler. Set the temperature to “high broil” and allow it to come up to temperature. Place the pan in the oven, under the broiler, leaving the door slightly ajar. Cook for 7 minutes. Remove from the oven and turn the steaks over. Return to the oven and continue to broil for an additional 7 minutes. Remove from the oven again and cover the steaks with aluminum foil. Allow the steaks to rest for at least 10 minutes. Finally, plate and serve!
