Tarte a l’Oignon | French Onion tart recipe

This is a very simple pie to make, especially if you use ready-made pastry like I do! It’s great for snacks, lunch, as a starter and party food. And it looks really impressive. You can also use pizza dough for this – it’s one of those tarts that’s so easy to make you can be versatile and play about with it a bit! It’s a staple of French cooking, and everyone has their favourite French onion tart recipe – I’ve included some optional extras below!

5 onions (750g/1.6 lbs)
Pepper
Salt
200ml sour cream (or crème fraiche or normal cream (6.5 oz)
2 eggs
Packet of shortcrust pastry

Optional

10 slices bacon
Sprinkle of herbes de Provence
Or teaspoon of Dijon mustard)
Or a sprinkle of paprika

Some people add grated cheese over the top too!

How to make a traditional French onion tart

Sweat the finely chopped onions in a pan in some oil with the salt and pepper.

Beat the eggs  and stir in the cream. If you’re adding herbs or mustard add at this stage. If you’re using bacon, fry it first, then add at this stage.

When the onions have turned golden brown, take off the heat and add the egg/cream mix.

Line pie/tart dish with the pastry.  This also works well with small pie dishes.

Pour over the pastry and cook for 30 minutes at 200°C (thermostat 6-7).

Delicious with salad, chips/fries, new potatoes, green beans…
