Ingredients

  • 4 cups water

  • 8 ounces pearl onions, peeled

  • 6 tablespoons butter

  • 6 tablespoons all-purpose flour

  • 3 cups milk

  • 1 pinch salt and freshly ground black pepper

  2. Pour water into a medium pot and bring to a boil; add onions and cook until tender. Drain in a colander, reserving 2 cups of cooking liquid; set onions aside.

  3. Melt butter in a saucepan over medium heat; whisk in flour to make a paste. Stir milk into reserved cooking water; add milk mixture slowly to the saucepan, stirring constantly, and cook until thickened.
