Confit de Sauternes is a specialty of the South-West known today throughout France and beyond. This jam (or jelly) is made from the famous sweet wine and goes perfectly with savory and sweet dishes.
Tasting Sauternes confit
A must-have on holiday tables, it is often served with foie gras (it also goes very well with gingerbread). It is also served with a cheese platter, which you can add dried fruit to enhance all the flavors it gives off.
Reheated over low heat, it will be perfect in a sauce to coat your grilled or roasted meats.
Likewise, it can be used as a base for your risotto broth.
For dessert, Sauternes confit is perhaps a little more difficult to use, but lovers of complex flavors will find what they are looking for. For example, in a pastry cream or a cheesecake, it will bring an interesting relief. Do not hesitate, either, to use it as a base for your autumn pies or in pudding.
