Ingredients

Makes 2 cups

large red or pink grapefruits

1

cup sugar, plus more for tossing

Preparation

  1. Step 1

    Cut peel from grapefruits into ⅜” strips leaving ¼” white pith attached. Place in a small saucepan; add cold water to cover. Bring to a boil, then drain; repeat twice.

    Step 2

    Bring peel, 1 cup sugar, and ½ cup water to a boil in same saucepan; reduce heat and simmer until peel is translucent, 15–20 minutes. Drain; transfer peel to a wire rack and let dry, 2–4 hours. Toss in more sugar.

  • Hmmm Interesting flavors and simple recipe… I made these for my spouse since his grandmother had recently passed away. He said he remembers the dried candied grapefruit peel she use to make. This doesn’t appeal to me, but I wanted to try to make these for him. These are an acquire taste, that I’m not sure if I could get use to, but hey. He mentioned how his grand use to use spice like cloves and maybe cinnamon, also it seems she’d boiled the peels for an hour, I think with the spices. Then she would do the sugar and water bath. So I’ll try this again using spices. Not like grandmother’s, but now at least I know somewhat what these are suppose to look like. Thanks -Tried to give this 4 stars but I couldn’t change it for some reason.
