Ingredients

4 Servings

pounds skirt steak

Salt and pepper

Preparation

  1. Step 1

    Cut 1½ lb. skirt steak into 4 pieces; season with salt and pepper.

    Step 2

    Grill over medium-high heat until medium-rare, about 4 minutes per side.

    Step 3

    Let rest 5 minutes before thinly slicing against the grain.

  • Great recipe, but I did it over charcoal. Price-wise, the Costco in Upper Manhattan has excellent skirt steak at $8.99/ lb in2-3.5 lb packages

  • Inexpensive? My working class area butcher charges 12.99 a pound for skirt steak....It's 10.99 (not trimmed as well) at the Russian supermarket....It's more expensive than Strip or porterhouse steaks.....
