Alexander The Great Salad

Guess he was upset with Caesar getting all the salad press. Alexander certainly goes his own way, though, with roasted red pepper and feta delivering an awesome flavor combo.

ingredients

1 head romaine lettuce cut into 1/2-inch strips
1 cup sliced cucumber
1 cup crumbled feta cheese
1/2 cup pitted kalamata olives
1/2 cup roasted red bell peppers, sliced
1/2 cup thinly sliced red onion
3/4 cup vinaigrette salad dressing

directions

Combine the lettuce, cucumber, cheese, olives, roasted peppers, and onion in a large bowl. Toss gently to combine.

When ready to serve, drizzle the dressing over the salad and toss lightly. Serve immediately.

    Used a combination of romaine and iceberg lettuce for a little added texture. We thought it was a really good salad and will make it again.

    Simple but good. I added quartered roma tomatoes instead of the roasted peppers though.
