Prime Rib With Yorkshire Pudding

A truly English affair. Yorkshire pudding cups are a perfect match for thick-cut prime rib doused in rich gravy.

4 pounds prime rib of beef
salt and pepper, to taste

Yorkshire Pudding

1 cup all-purpose flour
1 cup milk
1 dash salt
1 teaspoon canola oil
2 eggs

directions

Preheat the oven to 425 degrees F. Season the meat with salt and pepper and place on a rack on a baking pan. Roast in the oven for 25 minutes, reduce the temperature to 325 degrees F and continue roasting 50 minutes to one hour, or until the meat thermometer registers 150 degrees F.

In a mixing bowl, combine the flour, milk, salt, oil and eggs, and beat until the batter is smooth. Let stand one hour while prime rib is cooking.

Spoon two tablespoons of the fat off the roasting pan and brush it in a muffin tin. Pour in the batter so the cups are 2/3rds full and bake in the oven for 30 to 35 minutes or until puffed and set. Serve immediately with the beef.

    ITS ALOT OF WORK BUT IT IS GOOD. I PREFER TO SEER MY ROAST IN THE OVEN AT 450 FOR 20 MINUTES. WOULD LIKE TO KNOW HOW TO MAKE AGU FROM THE ROAST.
