Pineapple Grilled Cheese

Want to take your everyday grilled cheese up to an 11? Look no further than this layered masterpiece, where pineapple and soy sauce add a nice sweet-salty punch to the creaminess of the TWO types of cheese. We used Canadian bacon, but leftover holiday ham would be just as great.

Ingredients
- 6
slices Canadian bacon
- 3
fresh pineapple rings, thinly sliced
- 2 1/2 tbsp.
butter, divided
- 1 tsp.
brown sugar
- 1 tbsp.
soy sauce
- 4
slices sourdough bread
- 8
slices Havarti
- 2 oz.
(4 slices) sliced gruyere
Directions
- Step 1Lightly spray skillet with cooking spray and heat over medium-high heat. Fry Canadian bacon, 2 min per side, remove from pan, and set aside.
- Step 2Lower heat to medium and melt 1 tablespoon of the butter. Add pineapple and sprinkle sugar and soy sauce on top. Caramelize pineapple, cooking about 4 min per side. Set the pineapple aside and clean pan.
- Step 3Spread the remaining butter on one side of each slice of sourdough.
- Step 4Layer the 2 sandwiches, starting with the butter side down, with 2 slices of Havarti, then 3 slices of bacon, half the gruyere, 1 ½ slices of pineapple, and 2 more slices Havarti. Topped off with the plain side of the remaining slices of bread.
- Step 5Heat the pan over medium heat and cook the grilled cheese covered until golden and crispy with melty cheese, about 4 min side.
