Ingredients

  • 1 ½ teaspoons extra-virgin olive oil

  • 4 slices whole-wheat bread, lightly toasted

  • 1 garlic clove, halved

  • 1 medium tomato and/or avocado, sliced

  • 4 large eggs, fried or poached

  • 2 tablespoons herbs or microgreens

  • 4 teaspoons capers, rinsed

Directions

  1. Brush oil onto toast, then rub with garlic. Top with tomato (and/or avocado) and eggs. Sprinkle with herbs (or microgreens) and capers.
