Mocha Yogurt & Raspberry Parfaits

These individual yogurt parfaits are layered with chocolate cookies and raspberries for a sweet treat. A touch of maple syrup balances the tangy flavor of the Greek yogurt.

Ingredients

  • 2 cups whole-milk vanilla Greek yogurt

  • 3 tablespoons pure maple syrup

  • 2 teaspoons instant coffee

  • 1 ½ cups coarsely crushed chocolate wafers

  • 1 (6 ounce) container raspberries

Directions

  1. Place yogurt, maple syrup and instant coffee in the bowl of a food processor. Process until the coffee crystals are no longer visible.

  2. Sprinkle about 2 tablespoons crushed cookies in the bottom of each of four 6-ounce ramekins. Top the cookie layer with about 3 tablespoons yogurt mixture and 3 raspberries. Repeat the layers, ending with crushed cookies on top. Garnish with whipped cream, if desired.
