Process until the coffee crystals are no longer visible. Sprinkle about 2 tablespoons crushed cookies in the bottom of each of four 6-ounce ramekins. Top the cookie layer with about 3 tablespoons yogurt mixture and 3 raspberries. Repeat the layers, ending with crushed cookies on top. Garnish with whipped cream, if desired.
